Nigerian Chicken Stew is an inexpensive meal that actually has tons of vegetables in it even if you cannot see them as they are stewed. Which makes for a full round meal to feed the family! Want to try this recipe with Goat and beef tribe Stew.

Nigerian Stew spicy, however you can make it less by adding less of the scotch bonnet peppers if you’d like. However, that is a major no no in African cuisine and for me also. I absolutely love the spice that comes from these amazing peppers.

Nigerian Chicken Stew with pounded yam

WHAT IS NIGERIAN CHICKEN STEW

This recipe is a popular dish in Nigeria that is made with either goat, beef or dried catfish. You can find all those variations on this blog as well! All are excellent!

This stew is so special that it is served as the main dish during the holidays in Nigeria.

So instead of our North American Turkey they serve Red Stew. 

Some people like this stew to be super spicy, I prefer it mild – spicy and so that is the recipe I’m sharing with you here. 

The intense “Red” color that you see in this recipe is from a blended mixture of red peppers, onions, tomatoes and spices. 

HOW TO MAKE NIGERIAN CHICKEN STEW

  1. You are going to want to start by bringing a large pot of water to a boil. In that pot place your chicken and season with 1 Maggie cube or chicken bouillon cube. 
  2. Reduce to medium heat, cover and allow it to simmer for 30 minutes. 
  3. Once the meat has cooked, make sure to strain the stock and KEEP THE STOCK this STOCK is GOLDEN.
  4. Meanwhile, on a cutting board, dice your onions, tomatoes, garlic , ginger and place in a large stock pot cover with water and bring to a boil.
  5. Boil the vegetables till tender ruffly 20 minutes, before removing the water and placing all the vegetables in a blender & blend till smooth. how to make NIGERIAN STEW
  6. Next in a large stock pot add a good amount of COOKING OIL.
  7. Bring it to high heat then add in the meat and fry the meat till golden brown, remove and set aside. 
  8. In the same pot add more cooking oil then your tomato paste, one sliced red pepper, purred tomatoes, ground crayfish powder etc and fry on medium heat with the lid closed for 35 minutes. Turning often so that it does not burn, be careful as it is hot and you will need to turn the heat down each time you lift the lid to ensure you do not get burned. how to make NIGERIAN STEW
  9. Add back in all the chicken drumsticks and stir, season with more maggi cubes or salt if desired.
  10. Adding in the set aside MEAT STOCK at this time then allow it to cook all together the remaining 15 minutes.
  11. Serve alongside some pounded yam, fufu or rice. 
  12. Enjoy!

Nigerian stews are served with either “Pounded Yam” or “Rice”. 

Pounded Yam typically is prepared with a mortar and large pot and is made from scratch. However do to advances in the food industry you can now buy it in a “powdered form” and make the same thing in less the time an effort.

  • 1 Maggi Cube
  • 1 tsp White Pepper

  • 4 Large Beefsteak Tomatoes
  • 1 can of tomato paste
  • 1 tsp Fresh Ginger Root
  • 2 Red Bell Peppers
  • 1 1/2 Red Onions
  • 1 tsp ground crayfish
  • 2 cloves Garlic
  • 2 Scotch bonnet pepper, minced
  • 1 Chicken Maggi Cube
  • Salt to taste
