Vermicelli Noodle Salad Recipes

Here you will find a collection of some of my all time favorite Vermicelli Noodle Salad Recipes that hail from both Vietnam and Thailand. Both countries make similar salads with the Thai versions be a bit stronger due to the extra fish sauce that is typically added to the SALAD DRESSING that it is served over top of the salad. Besides that the ingredients in each salad are pretty much all the same! Being that Vietnamese’s noodle salads and Thailand Noodle salads are all made with vermicelli noodles and an array of vegetables. 

I’m obsessed with these type of salads and make them often. Matter of fact I have this salad at least once per week in my home during the hot summer months! 

Vietnamese Salad dressing vs Thai Salad dressing

Both dressings have the same ingredients ironically but traditionally the Thai dressing will have much more Fish sauce making it more strong and more salty. Also you can use sugar or honey in either of the sauces to sweeten it up. 

WHAT IS IN both THE DRESSINGS

  • Fish sauce
  • Rice vinegar 
  • Lime Juice
  • Sugar
  • Garlic 
  • Sliced Green & Red Thai chilies

You can find the directions for each dressing in each individual recipe, feel free to tweak the ingredients as per your personal preferences. Example, more fish sauce for more salty flavor, more lime juice for more tang and more chilies for more heat.

CRAB POTATO SALAD

Canada eh? Canada Day is right around the corner and so I’m sharing one of my favorite salads “My Crab Potato Salad”!

Hello everybody, I can’t believe we are about to hit Canada’s been 151 years soon, I feel so old… ha well i kinda do. I recently turned 30 something, but I might as well turned #151 because I was actually born on Canada Day, imagine them apples. So when everybody is Celebrating this holiday, it once again feels like everybody is celebrating my Birthday!! Lucky me eh? 

Canada Day, means different things to different people. For me it has always meant school is over and summer is finally here! However as I get older, it’s now a time of reflection as well as a time where to get out and do some camping and be at one with nature. One thing for sure, is that this date is one where all Canadians come together, from sea to shining sea to Celebrate our nation’s Confederation. With FREE events happening Nationwide and all weekend long, you’re sure feel the spirit of it all.

So cool factsOn Canada Day, July 1, 1980, the English version of ‘O Canada!’ was proclaimed the National Anthem of Canada, 100 years after it’s debut performance in 1880 for St. Jean-Baptiste Day celebrations. Composed by Calixa Lavallée, French lyrics were written by Sir Adolphe-Basile Routhier. Many English versions followed, but the current ‘official’ lyrics are based on a version written in 1908 by Robert Stanley Weir for the Diamond Jubilee of Confederation in 1927. ‘O Canada’ was, by far, the best-known patriotic song in Canada by the time World War I broke out in 1914. Many other songs had all but disappeared, and the once-popular ‘Maple Leaf Forever’ is rarely heard these days.

CRAB POTATO SALAD

Adventure level: 2/5

Serves: 10

This Crab Potato Salad is sure to be a hit for any Summer event! 

 Ingredients

  • Imitation Crab meat (8oz) package
  • 2 tbsp Old Bay Seasoning
  • 2 tsp Celery Salt
  • 1 tsp Onion powder
  • 1 tbsp White Pepper
  • 4 tbsp of Fresh Dill
  • 3/4 cup Hellman’s Mayonnaise
  • 1/2 cup Sour Cream
  • 4 Celery chopped
  • 1 Red Bell Pepper Chopped
  • 2 stalks of Green onions
  • Lemon Juice

 

Directions 

To make the recipe:

  1. Wash and peel your potatoes. Chop them into bite size pieces and place them in a pot covered with water, boil till fork tender. Once cooked, allow them to cool down in cold water.
  2. While your potatoes are cooking, mix your mayo, sour cream, old bay seasoning, celery salt, white pepper, together in a large bowl and set aside.
  3. Now chop your celery, green onions, dill and red peppers into small pieces and set aside.
  4. Once your potatoes are completely cooled down, add them to a larger bowl.
  5. And place all your ingredients from bowl 1 into the larger bowl and combine till your potatoes are coated.
  6. Then add in your “flaked” imitation crab and your remaining ingredients and mix till combined.
  7. Squeeze in the juice of one lemon, “make sure the seeds don’t fall into the salad”.
  8. Garnish with green onions and chill in the fridge 1 hour before serving.

 

Note: You can add red cherry tomatoes too this also.
