It’s finally here 2019! How lucky are we all are to be ALIVE in such a time as this. Eating is a BIG part of life and though I do not believe in cutting calories or following any kind of fad diet. Because  honestly that doesn’t last to long, I do believe in eating healthy. And by healthy I mean eating more whole foods and less processed as much as possible. 

And so I compiled a awesome list of some tasty “Meal Prep” recipes that would help anyone stay on track with eating healthy going into the New Year. Let’s face it we are all so busy these days and meal preps are a great way to keep on track with eating good yet healthy food while away from home. So skip the take out and make your own lunches!

Restaurant Review –  Breakfast & Dinner Dishes 

This was a fantastic restaurant to sit down for Breakfast. We went right before Christmas, and even though it’s inside an Atrium in a hotel with tropical plants and tiki huts, they decked it out with Christmas lights and decorations too that made it feel super cozy.

The atmosphere was very relaxed and the services was amazing, our waitress, came back 3 times to top up our morning coffee.

I had the Salmon eggs Benedict (above)

Each breakfast came with It was served with cubed hash browns on the side, coffees where separate. We ate it all, but both of us were not a fan of the hash browns, we much prefer the shredded kind.

Jason had the regular Bacon and Egg Benedict Breakfast!

 

Restaurant Review –  Dinner Dishes 

We noticed Christmas lights wrapping around the dining area, and decided to come back in the evening for dinner see that review below.

The Christmas lights were out and the restaurant had a great ambiance. Dinner menu was diverse and the food was great. Jay ordered the seafood pasta bowl and loved it!!
It was creamy and packed with seafood and we ended up taking half the pasta back to the hotel because there was just too much.
 
For dinner I ordered the Butter Chicken and it was very good for a non indian restaurant. You can pick your level of spice from 1-5.

Restaurant Review – Mexican Dinners

Jay thought he was gonna go for a few tacos until he saw the waitress pass our table with an Amazing looking dish which turned out to be an Enchiladas.

So he quickly changed his mind and ordered the Tequila Citrus Chicken lime cilantro crema, pear salsa enchilada.  His eyes were bigger than his stomach though as he only was able to finish one, it was such a large portion he ended up taking the other half home. 

Tacos are my favorite Mexican food and so I choose the Spicy Coconut Prawn, with chili, mango coleslaw. And the Adobo Pork  roasted red pepper, pineapple salsa taco. Both on there 6″ inch soft tortillas.

I knew immediately that this was one of the best Fish taco I have ever had. It was a little on the sweet side and if you know me I don’t like sweet food very much, but the waitress assured me that I could spice it up if need be. And all i can say is OMG…. this taco was out of this world once I added the spice. I just wish it was BIGGER!! I would have ordered 3 if i knew it was this good!! Just look at the fish in this thing, soooo tasty.

The pulled pork was good but after tasting the prawn taco I could not enjoy it as much and just wanted all prawn.

You can taste the freshness in all these dishes. A very authentic and unique place that we will be returning to again when we are in the area.
