Irish Lamb Stew

A classic stew that is sure to warm the soul on some of those long chillies of days. This Lamb Stew hails from Ireland and dates back to the early 1800 century and has become very popular dish Worldwide.

The Irish know that this type of stew always tastes much better the next day. So that is why I make a large batch so that me and my partner can enjoy it over a few days.

Allot of recipe you will find for this stew will call for flour, I prefer not to add that since the potatoes thicken the liquid up very nice, leaving enough juice to mash them in.

If you prefer a thicker stock, simply go ahead and mix 3 tbsp of flour into the beef stock before adding to the pot.

I grew up eating Irish Stew though my family is not Irish. It was always served on the table around the St.Patrick’s day holiday.

I did not ask my mom for her recipe, because I pretty much remember how it’s made and have been enjoying it myself over the years.

The key to making the best Irish Lamb Stew is simmering in for at least 2 hours on a Low -MEDIUM heat on the stovetop or for 8- 10 hours in the slow cooker. 

This really makes the stew so tender and helps to merge the flavors all together to create the most flavorful meal.

Also you don’t want to use oil you want real butter and not a whole lot, 2 tbsps will do.  Along with fresh thyme and rosemary really help to kick it up a notch.

Oh and also use beef stock instead of chicken it just tastes that much more better in the end.

Lamb Stew always tastes richer and better the next day. So whenever, I make it I will make a large batch and eat it over 3 days = sharing of course.

Also for this recipe I used bone in cubed lamb because that is what I found this week at the grocery. However, it’s best to use cubed lamb without bones if you can find.

Notes: This stew can keep in the fridge in a airtight container to up to 3 days. If you are cooking this in the slow cooker then add 1 cup less of beef stock or add 3 tbsp of flour to thicken it up. Otherwise cooking it on the stovetop with the lid off the last 30 minutes will reduce the stock.

Spicy Stuffed Peppers

These Spicy Stuffed Peppers are the perfect keto friendly dinner and are healthy healthy. 

I picked up a bag of “Naturally Imperfect Sweet Peppers” earlier in the week and thought they would be great for my new stuffed pepper recipe.

Basically that means pepper that are not perfectly shaped = to me that means non GMO and is better.

You can also use mini sweet peppers for this recipe and make it more of an appetizer if you wish.

These spicy stuffed peppers are extremely delicious and are low carb and gluten free. Topped with Gouda Cheese and Fresh Parsley! 

Now not all wild rice mixtures are gluten free, so if you are on a gluten free diet I recommend the brand I use in the ingredients section.

Full of feel good fiber and protein, you and your family are sure to feel fully satisfied after eating this.

Each pepper is filled with pre-cooked black beans, wild rice mixture and sweet ghost pepper naturally smoked bacon.

The sweet ghost pepper bacon is what gives the recipe it’s sweet, spicy and smoky flavor.

Then topped with shredded gouda cheese and you will be dining good tonight!

Healthy Eggplant Parmesan

I call this recipe “Healthy Eggplant Parmesan“, because we are baking the eggplant vs deep frying it in oil. 

IS EGGPLANT PARMESAN HEALTHY

Yes, it has lots of vegetables and spices in it.

If you are on a low calorie diet you can use less cheese if desired and omit frying it in oil. 

Now I know many Italians swear by frying the eggplant in olive oil prior to baking.

However that is not very healthy and so I find that baking it just as good. 

WHAT EGGPLANT PARMESAN

This Eggplant Parmesan uses one large eggplant, fresh mozzarella and parmesan cheese, panko bread crumbs, eggs and your favorite tomato sauce of choice along with some Italian spices.

You can also add spinach to this recipe if desired, either way your going to fall in love with this recipe. Guaranteed!

WHY IS MY EGGPLANT PARMESAN TOUGH

Because, you simply need to soak the eggplant prior in water and salt to tenderize it.

That way it will turn out just as delicious as the kind that is fried in oil.

Also this recipe is suitable for those a on keto or low carb diet, since there’s no pasta used in this one.

You will want to start by soaking the eggplant in water and salt before hand to tenderize and remove any of the bitter taste.

Don’t miss this step, it’s important.

Now, if you think you will be missing out on the meat protein here and feeling hungry afterwards.

Then you will be pleasantly surprised to find this meal is just as filling as say Chicken parmesan. 

My family much prefers Eggplant Parmesan now to Chicken Parmesan.

IS EGGPLANT PARMESAN VEGETARIAN

Not this one as it has eggs, however if you want to make it you can skip the eggs. 

I like to make a large casserole dish, which makes about 6 individual large servings.

Typically we will eat this over the next few days and sometimes I will make two batches and freeze a bunch for my meal prep lunches. 

Your family will not believe this is made with eggplant. Just you?

Make numerous small portions and freeze it for quick on the go meals for down the road.

Cheesy Tuna Casserole

I call this the works tuna casserole, because it has a bunch of healthy stuff in it like fresh parsley, tomatoes and red peppers. Then it’s smothered in cheese, YESSSS Cheese! 

Tuna casserole never tasted so good and your family will not believe this is made with tuna. I like to make this dish with eggless noodles, making this dish ready in under 30 minutes flat. 

Great for a quick and healthy weeknight meal or even excellent casserole to serve at your next family gathering. Just you? Make numerous small portions and freeze it for quick on the go meals. 

You can prepare this dish with chicken, turkey or hamburger meat as well or make vegetarian, all four ways are amazing. 

However I like to make it with tuna, because it’s just another way for me to get fish in my diet.  If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!
