Healthy Eggplant Parmesan

I call this recipe “Healthy Eggplant Parmesan“, because we are baking the eggplant vs deep frying it in oil. 

IS EGGPLANT PARMESAN HEALTHY

Yes, it has lots of vegetables and spices in it.

If you are on a low calorie diet you can use less cheese if desired and omit frying it in oil. 

Now I know many Italians swear by frying the eggplant in olive oil prior to baking.

However that is not very healthy and so I find that baking it just as good. 

WHAT EGGPLANT PARMESAN

This Eggplant Parmesan uses one large eggplant, fresh mozzarella and parmesan cheese, panko bread crumbs, eggs and your favorite tomato sauce of choice along with some Italian spices.

You can also add spinach to this recipe if desired, either way your going to fall in love with this recipe. Guaranteed!

WHY IS MY EGGPLANT PARMESAN TOUGH

Because, you simply need to soak the eggplant prior in water and salt to tenderize it.

That way it will turn out just as delicious as the kind that is fried in oil.

Also this recipe is suitable for those a on keto or low carb diet, since there’s no pasta used in this one.

You will want to start by soaking the eggplant in water and salt before hand to tenderize and remove any of the bitter taste.

Don’t miss this step, it’s important.

Now, if you think you will be missing out on the meat protein here and feeling hungry afterwards.

Then you will be pleasantly surprised to find this meal is just as filling as say Chicken parmesan. 

My family much prefers Eggplant Parmesan now to Chicken Parmesan.

IS EGGPLANT PARMESAN VEGETARIAN

Not this one as it has eggs, however if you want to make it you can skip the eggs. 

I like to make a large casserole dish, which makes about 6 individual large servings.

Typically we will eat this over the next few days and sometimes I will make two batches and freeze a bunch for my meal prep lunches. 

Your family will not believe this is made with eggplant. Just you?

Make numerous small portions and freeze it for quick on the go meals for down the road.

Yes, and you can make it into meal preps for lunch or dinner for another time. 

MEAL PREP IDEA: Make enough to create a few meal preps bowls for the week ahead.

By sectioning each eggplant medallion off into “meal prep” bowls in which I freeze for lunches/dinners for down the road.

Cheesy Tuna Casserole

I call this the works tuna casserole, because it has a bunch of healthy stuff in it like fresh parsley, tomatoes and red peppers. Then it’s smothered in cheese, YESSSS Cheese! 

Tuna casserole never tasted so good and your family will not believe this is made with tuna. I like to make this dish with eggless noodles, making this dish ready in under 30 minutes flat. 

Great for a quick and healthy weeknight meal or even excellent casserole to serve at your next family gathering. Just you? Make numerous small portions and freeze it for quick on the go meals. 

You can prepare this dish with chicken, turkey or hamburger meat as well or make vegetarian, all four ways are amazing. 

However I like to make it with tuna, because it’s just another way for me to get fish in my diet.  If you end up giving this a give it a try, I would love to know how you liked it. Bon Appetit!

Pistachio Cheesecake

What better way to celebrate the holidays than with this Festive No Bake Pistachios Cheesecake that is topped with pomegranate fruit.

Just image serving this no bake pistachio cheesecake at your next Christmas gathering!

It is not only super festive its unique and sure to be a center at the dessert time.

It has a shortbread and graham cracker crust and is filled with pistachio pudding and heavy whipping cream and of course cream cheese. 

There really isn’t much to this recipe.

Simply  follow the basic steps below and you will have the most amazing pistachio cheesecake to serve your guests this year or every year.

This Cheesecake will have you and those who get a chance to have a slice wanting more, nice thing is this 8″ inch cake can serve 12 people.

And you won’t have to spend all day in the kitchen baking, because let’s be honest it’s the holidays and time is short.

Since this is a no bake cake, you are going to want to prepare it the day ahead, then allow it to set in the freezer for at least 6 hours prior to serving.

Indie, says make sure you defrost the cheesecake for anywhere from 20 – 30 minutes on the counter prior to slicing and serving. This way you will have a creamy cheesecake, she really likes it creamy. During the defrosting time, you can start to decorate it with the pistachios and pomegranate seeds.

Simply leave the cheesecake in the cheesecake pan on the countertop, and start by placing your seeds all around the outside covering the rims with seeds.

Then crush up the pistachios with a large knife, and sprinkle all over the top. Once the cake is defrosted fully, remove the cheesecake pan and slice to serve.

This frozen cheesecake is just one of those recipes that everyone should have in their freezer around the holiday season. Enjoy!

Strawberry Milkshake (Kefir)

I’m a sucker for Strawberry milkshakes and so is my mom. I think between the both of us, we have enjoyed well over 1000 shakes together, that does not include apart. 

I like to brag these days that I like to enjoy a Strawberry Milkshake for breakfast. And that is the truth, and let me tell you I feel not one ounce of guilt. That’s because my Milkshake is super healthy for you, and does not compromise on taste.

The kefir gives it the right amount of creaminess we all crave and the fresh strawberries make it so fruity!
