Chicken Tortellini Verde

This simple one pan recipe is made with chicken tortellini, baby tomatoes, sour cream and green verde sauce. It doesn’t get any simpler than this folks!

If you have tried Green Chili verde in Mexican cooking before and liked it. Then your sure to like this Chicken Tortellini Verde which is made in the same Tomatillo green sauce. 

Your probably thinking, Italian pasta and Mexican Green Chili Verde! Could that possibly be good? Well I assure it is because it has the right balance of flavors.

And this recent recipe creations has turned out to be a favorite in our home.

Sure, you won’t typically find this offered in any mexican or italian restaurant. However I encourage you to give it a try if you are a foodie like me! It’s an excellent fusion dish and is absolutely delicious! 

Now there is a process to making authentic tomatillo sauce and that starts with roasting tomatillos, along with garlic, jalapenos and onions in the oven. 

However that takes a lot of time and would make this recipe not so quick. So instead we are using a pre -made green chili sauce that has all those authentic mexican ingredients in it. 

So what are Tomatillos anyway? Well they are little green looking tomatoes, known as the Mexican husk tomato, but they are hard to find here in Canada. 

And even so I prefer to buy it pre-made its still natural and fresh. Also don’t forget to add the sour cream as well, this really kicks up the flavor and pulls the dish together.

The Best Shepherd’s Pie

This is the Best Shepherd’s PieMade with fresh carrots, sweet corn and frozen peas. Along with perfectly seasoned ground lamb and beef this pie is sure to please the whole family.

Shepherds pie can be made all in one dish.

That is if your using the type of dish that can go from the stovetop to the oven like I have here with my Rock Dutch Oven.

Otherwise, you can prepare it first on the stove then move it to a separate baking dish to finish it in the oven.

Not to hard and worth the effort because this recipe is something you will not forget anytime soon.

You are sure to taste the difference with this recipe here, since it uses two kinds of meat.

Creating the best of what is known to some as a “Cottage pie” which is typically made with just beef and the “Shepherd’s pie” which is  made with minced lamb.

I grew up eating the cottage pie, which is made with beef instead of lamb. Traditional Shepherds pie originated from Ireland and is made with just lamb.

So even though you may have thought that you were enjoying a Shepherds pie in past, it may have been the ladder.

Anyone who has ever tried my recipe has said to me “this is the best” shepherds pie they have ever tasted! So that is why I named it the BEST!

Just make sure you are using fresh carrots not frozen. Because there is a huge difference in taste and texture with the fresh. Also use fresh rosemary and thyme if you can it just enhanced the flavors that much more.

Now you will want to start by taking the easy way to preparing this recipe. And to do that you will want to start by skipping the peeling of the potatoes and boil them instead.

This will allow for you to run them under cold water once they have cooked. Being able to simply peel them by hand. From there you will mash them with some whole milk, sour cream and an egg yolk. 

Now the hardest part is done, next you simply are going to saute the two meats in a large pan for roughly 5 minutes before adding in the chopped onion, garlic and spices.

The pan I use is the rock its a large dutch oven type pan that goes from the stove to the oven.

Chocolate Chunk Nut Banana Bread

I have been told on numerous occasions that my Chocolate Chunk Nut Banana bread is Amazing. I will let you be the decider on that though!

This bread is kind of like eating a cake and a cookie all at once, but way more healthier than a cake or cookie.

Because are omitting the oil and using 3 ripe Bananas (the riper the better) + Macadamia & Walnut pieces that makes this a very nutritious and satisfying snack.

Soft and Moist on the inside, and slightly crunchy on the outside. This is the stuff dreams are made of if you ask me 🙂 I hope you give it a try!

Note: You can substitute chopped pecans, hazelnuts or almonds if you prefer.

Bacon & Ranch Potato Salad

Who likes Potato Salad? How about a Creamy Ranch and Bacon Potato salad? Well then this recipe is for you! 

Not to mention is super simple to make.

I like to make this recipe for when I am having company. 

Because it sure goes a long way and typically can feed anywhere from 8 -10 people.

If you are having more people, simply double it up! It’s always sure to be a hit, and doesn’t cost much to make.

We sent our fur friend out to find the freshest potatoes for this recipe and he sure didn’t fail us.

When he came back with a box full of them.

Unfortunately he is allergic to onions. so he had to pass on this recipe.

However he did snack on some of the bacon of course. 

To make the salad you will want to pre- cook the bacon and potatoes, once your bacon and potatoes have cooked and cooled down.

Then you will add in remaining ingredients and allow it to set by chilling in your fridge before serving. We hope you enjoy!

Note: If you are planning to leave the house and want to take you salad with you. You can keep it cold by placing your potato salad into a pre chilled container.

Chicken Fajita Tortilla Soup (Slow Cooker)

This is a super simple way to make a fresh bowl of Tortilla Soup, really there is not much to it. 

Start by cutting up your chicken breasts into bite size pieces, and saute them till lightly browned.

Next all you have to do is add everything else into the slow cooker, and let it do it’s thing.

Just be sure not to skip on the important ingredients (see pictures) below and you soon too will be in Mexican soup heaven! Serve hot, and garnish with shredded cheese and top with tortilla chips.

Don’t have a slow cooker, this can be done on the stove top as well, just allow it to simmer covered on low for 1 hour. Provecho!
