Easy Tomato Tortellini Soup

This easy Homemade Tomato Tortellini Soup will change your life. That is if you love tomato soup but have never made it from scratch like this before. It’s creamy and super healthy for you. Not to mention absolutely delicious! 

And trust me it does not compare in any way to the canned stuff. But you are just gonna have to try it for yourself to see.

What Is Passata tomato sauce 

Passata is a tomato purée made from fresh, tomatoes that are bottled for use.

I like to use “Passata Sauce” in this soup because it basically is uncooked tomato puree without seeds or skins and works so well when making this type of soup.

Of course you can always use fresh tomatoes and blend them into a puree in the blender as well.

Totally up to you!

So if your craving some basic tomato soup, but also want a hearty meal as well.

Then this recipe is going to be one of your go to tomato soups going forward. Trust me! It’s mine.

Easy Tomato Tortellini Soup

Is a versatile recipe but what makes it EASY is that we are using pre-made pureed tomatoes.

Passata bottled tomatoes to be exact which are fresh tomatoes that have been uncooked but bottled

HOW TO MAKE Easy Tomato Tortellini Soup

  • Start with a bottle of PASSATA TOMATO PUREE SAUCE 
  • Then to add a bit more of a tomato base, I will use a can of tomato paste which blends out well when added to the vegetable stock. See recipe card below for all the steps!

HOW LONG DOES HOMEMADE TOMATO SOUP LAST?

You can freeze this up to 6 months but will want to eat it within 24 – 48s hours so the tomatoes don’t spoil in your fridge.

Also keep in mind, as with all my recipes. If you want to make more or less of this soup, simple adjust the serving size in the ingredients section above and the servings will automatically adjust for you. This soup can store in the fridge for up to 3 days and or freeze for up to 3 months.

Notes: You can always use chicken stock in replace of vegetable if desired.

Grilled Cheese Tomato Tortellini Soup

This Grilled Cheese Tomato Tortellini Soup is super tasty and simple to make. If you like grilled cheese sandwiches then your going to love this soup!

I grew up eating grilled cheese sandwiches, I have no idea how many I have eaten in my adolescent years. But I’m guessing hundreds if not… dare i say thousands.

I mean what kid doesn’t like a grilled cheese sandwich? Now that I am grown, I like to experiment with lets say, more sophisticated recipes. You know so that my family thinks my tastes have evolved. 

This soup really satisfies my craving for a grilled cheese sandwich, which i admit comes on now and again. If you have kids, I can only imagine how much they would love this soup!

Over the years I have made this soup a few different ways and found this recipe to sure hit the spot. Actually the day I discovered “Passata Sauce” is the day I started experimenting with homemade tomato soups.

So what is Passata Sauce?

Passata Sauce is the base for all Italian tomato sauces, it is uncooked tomato puree without seeds or skins. Essentially, it is tomato sauce in its rawest form. Of course you can always use fresh tomatoes by blending them into a puree in the blender as well. Totally up to you!

Then to add a bit more of a tomato base, I will use a can of tomato paste which blends out well when added to the vegetable stock.

Serve this alongside a grilled cheese sandwich and you will be in HEAVEN!

And without further adieu the secret ingredient is Philadelphia Cream Cheese!

Crispy Herb Crusted Salmon

I just love these crispy herb crusted salmon fillets, not only are they super delicious there also super healthy for you and easy to make. 

That is why I love home cooking, because you can make healthy home cooked meals from scratch.

Such as this tasty fish and feel satisfied knowing exactly what is going into your meal.

I used to occasional buy those pre boxed fish, you know what I’m talking about?

Those frozen battered kinds in the freezer section at every grocery store. 

Well those days are over.., and i think if you try this recipe. You will feel the same way too!

Even though I am a food blogger, I can admit that their is some recipes that do intimate me. 

And i guess it is because I have never tried to make them. But being a food blogger I get to have a few trial and errors before I share my winning recipe with you all.

And that is how this recipe, came to be. 

Over the years though, I have developed much more confidence to tackle almost any type of recipes. Such as homemade breaded fish!

Doesn’t this look 100% better than any store bought or boxed breaded fish?

And so much healthier too I bet. 

HOW TO BREAD FISH

It’s as simple as emptying 1 package of extra crispy shake and bake into a shallow bowl.

Along with 1 cup of panko bread crumbs, brown sugar and seasonings.

Then coat the salmon fillets before baking at 400 degrees f for 15 minutes then that is it. 

This super flaky and moist salmon dinner is ready to be served with your favorite vegetable such as sauteed kale and a fresh lemon wedge of course.

 

This is the kind of shake n bake that I use for this recipe!

Place onto a non stick pan and your good to GO!

Serve alongside your favorite vegetable and you will will have one healthy and tasty meal!

You can’t go wrong with this simple yet flavorful dish that is sure to make you a salmon lover for life.

Parmesan Roasted Carrots

I just love carrots, but that wasn’t always the case. I guess it’s because I grew up eating them the wrong way, boiled and tossed in butter after. Boring! 

So there was a time that I hated carrots, so much so that I never bought them in my adult years at all.

But I knew I had to find a way to eat them since they’re packed with beta-carotene a vitamin that is very important to have in your diet according to the eye doctors.

Not to mention the fiber along vitamin A, Vitamin C, Vitamin K, vitamin B8, folate, potassium, iron, copper, and manganese, proves just how important it is to get this vitamin rich food in your diet as much as possible.

This recipe is super simple, you don’t even have to peel the carrots if you don’t want too. However if you decide to, they can be a good thing to add to your dog’s next meal.

To make this simple side, you will want to wash the carrots well then chop off the ends, and lay them out on a non stick pan.

Drizzle all over with olive oil and a few tsp of butter, along with thyme, basil and oregano and parmesan cheese then let your oven do it’s thing. Serve as a side dish to any meal, goes great during the holidays too!
