Simple Swedish Meatballs

These Simple Swedish Meatballs are served over a bed of egg noodles in a creamy low fat sauce. A recipe that you and your family are sure to love. 

WHO SELLS SWEDISH MEATBALLS

Costco does but so does President’s Choice. 

So what does that mean? It means you can have creamy Swedish Meatballs on the table in less than 20 minutes! 

That is the reason I call these Simple Swedish Meatballs because really there is no fuss when it comes to making this popular recipe.

You can literally have this whole dinner on the table in less than 30 minutes! 

Making swedish meatballs this way becomes a weeknight meal savor if you ask me. Because instead of making these meatballs from scratch which take a fair bit of time and technique.

Your simply using some pre made meatballs that are fail proof and do not need to be baked. 

Your going to love this really inexpensive dinner option, trust me

This recipe serves a family of four or you can use my easy to use recipe adjuster and make it for more people if you like.

Your family will think you where slaving in the kitchen all day making meatballs when really you were doing other important things 😉

Keep in mind those pre made meatballs come in a package that has 907 grams. I only used 650 grams of those meatballs and that alone feeds four people. So taking that into consideration this recipe is also frugal!

The brand that I like to use is President’s Choice Swedish Meatballs. You can use your favorite pre made meatballs of course and even opt for a chicken or a vegan variety, totally up to you.

Swedish Meatballs are the ultimate comfort food and typically are served overtop a bed of large egg noodles, however you can serve them over mash potatoes as well if  desired. 

I like to saute the meatballs in butter and oil first which helps bring out the flavor more.

Then I will use that same butter and oil to make a roux for the sauce that turns into the most delicious gravy ever.

Also since I typically just cook for me and my partner, I often tend to make dinner for two, three or four people. This recipe will feed four people easily and get this.

Are you cooking for a larger crowd? or perhaps having to provide something for an upcoming potluck?

Then this recipe is sure to be a hit and everyone would be think that you spent a lot of time at it.

If you have a little more time and want to make your meatballs from scratch, I recommend following this recipe for making Classic Baked Swedish Meatballs.

Just be aware that it does take some time and technique, as sometimes they do fall apart while searing them. So cooking them in the oven is best if you are to make them from scratch.

Go ahead and indulge you deserve it!

Note: You can add 1/2 cup of cream to this dish around the time you add in the beef stock if desired.

Honey Lime Vinaigrette

This Healthy Honey Lime Vinaigrette is sweet tasting with a hint of tang. And goes quiet well on many different types of salads. 

I started to share some of my favorite homemade “Healthy Vinaigrette” recipes here with you all this summer. This recipe will be the third one on that list, so if you like this one.

This one is listed as vegan and that is because we are not adding in any sour cream or yogurt like some of my other dressings. Making it more light too!

Gone are the days where I will buy store bought Vinaigrettes, homemade just tastes that much better and is healthier. So I encourage you to give it a try as well. Really there is not much to it, pour shake and store. That’s it!

So what makes this a healthy vinaigrette? It’s the ingredients of course. This one calls for olive oil, lime juice, dijon mustard, honey and a few seasonings.

This Vinaigrette also pairs really well with all types of vegetables and proteins. I like to use mason jars to store my dressings.

Then you can simply shake everything together and wulla it’s ready to enjoy! Plus each mason jars can store in your fridge for up to 3 weeks.

Note: Stores in the fridge up to 3 weeks! Also if you prefer more sweet than tangy vinaigrette feel free to add anywhere from 1 tsp to 1 tbsp of honey to sweeten it up. Personally I like it without!

Vegan Corn On The Cob Salad

This Fresh Corn on the Cob salad is full of flavor and is a very healthy salad option for those who vegan diet or those who want to include more meatless meals into their lifestyle. 

Made with just a few simple ingredients of fresh sweet corn on the cob, avocados, cucumbers, orange and red peppers.

Then it’s topped with my homemade Honey Lime Vinaigrette which makes for a very tasty low carb yet filling salad. And you will be in business!

When making a cob salad, you want to be sure to use fresh corn on the cob.

Of course you can use canned corn or frozen but i’m telling you it just is not the same.

So really try to get your hands on the fresh stuff if possible.

The sweet corn and orange pepper give this salad a hint of sweetness! So when you add just a touch of the “Honey Lime Vinaigrette” you will really help to ampt up the sweet flavors even more.

Your going to want a light Vinaigrette to accompany this salad, so i’m sharing that recipe with you as well. 

It is not only perfect for this particular salad it also can be stored in the fridge for up to 3 weeks and used on plenty of other salads. 

Also be sure to only pour the vinaigrette overtop once your ready to eat it, otherwise you bare the chance of having mushy avocados.

Chicken and Bacon in a Dijon Mustard Sauce

This Chicken and Bacon in a Dijon Mustard Sauce recipe is out of this world, you may think there is a lot of fattening ingredients in this one pan dish, but you would be wrong. 

If you know me, you know that I like to balance my cooking. So if I’m adding an indulging ingredient into my cooking such as bacon,. Then I will make sure not add too many other ingredient that could take away from such flavours.

This dish comes together beautiful in a mustard sauce that is not full of fat but rather flavour. Made with onions, Dijon mustard, lemon, apple cider vinegar and just the right seasonings that only enhance the dish not mask it.

I kid you not this recipe is pretty healthy for you, compared to other similar recipes out there which call for heavy cream, which I find ruins the dish. 

This recipe reminds me of a dish I tried many years ago, called Yassa Chicken (Poulet au Yassa) which is a very popular Senegalese dish.

So in this dish we are basically merging the flavors from that traditional dish with some other amazing dishes that are more popular in Europe to come up with this unique and out of this world recipe. 

So follow along below for the most mouth-watering dinner that you are your family are sure to love, it’s definitely become one of our family favorites.

You must try this dish over a bed of egg-noodles, it gives it that German snitches feel without all the heaviness, and goes so well with the sauce. 

On a gluten free diet?

No worries you can choose gluten free egg- noodles then you will have a completely gluten free meal.

Start by cooking your egg noodles first, because the rest takes less than 20 minutes to prepare and you want to be able to merge the two at the end. 

Next start with chopping the bacon and onions, and sauteing them together till cooked.

Be sure to remove the bacon and onions one cooked and set aside, before placing the chicken breasts back in the pan to saute the chicken.

Saute the chicken on medium heat in the bacon fat till cooked, approx 10 minutes or until they are lightly browned and cooked in the center.

Then remove the cooked chicken from the pan and finished off by making your dijon mustard sauce in the same pan. Merge everything back for one last time in the pan, allowing everything to simmer together before serving.

Skillet Lobster Mac and Cheese

This Skillet Lobster Mac and Cheese is such a delicious and comforting meal for two. 

I had something similar at a restaurant last year and had to make it for myself. This is sophisticated version of  the old fashioned macaroni and cheese that you may be familiar with. 

So why not treat yourself and someone special, to a warm bowl of mac and cheese, infused with some grilled lobster.

LOBSTER MAC AND CHEESE RECIPE

  1. Start buy cutting your lobster down the middle and then directly in half so you can remove the meat and use the tales in the dish.
  2. Cook your macaroni according to the instructions, rinse and drain once cooked.

Prepare your White sauce:

  1. On low heat, place your sliced in “half lobsters” with the meat still inside in a cast iron skillet. Allow them to cook for a few minutes on each side, and remove from heat before they are fully cooked and set aside.
  2. Allow the lobster to cool, and remove the meat with your thumbs and set the shells aside (to be cooked later with the pasta)
  3. In the same skillet melt your butter on medium to low heat and slowly add in your flour stirring constantly.
  4. Be careful not to burn your flour, watch to make sure the FLOUR is becoming a light brown color, still continuing to stir constantly. This may take 5 minutes or more. If this is not done properly you will either have under cooked flour or you will burn it.
  5. Once the butter and flour has retched a light brown color, and your sauce has cooled for 5 minutes slowly add in  your “COLD” milk and stir till combined. Next, turn down the burner to low heat and add in your thyme, old bay seasoning and nutmeg into the white sauce and whisk it all together for 2 minutes or until fragrant. Then your Worcestershire sauce, some salt and continue stirring for 5 minutes. Time to add in your “Old Shredded Cheddar Cheese” a bit at a time while stirring it over a low heat until the cheese melts into the white sauce. Now add 1/2 tsp of your Dijon Mustard and let it sit to combine.
     

Baking the Macaroni and Cheese:

  1. Now add your lobster shells to the boiling water and cook your paste, once cooked drain it off (keep the shells for baking in the oven)
  2. And in your pre cooked macaroni to cast iron skillet (add a few drops of water so its not to dry) and toss to coat with the old cheddar cheese and lobster meat. Add salt and pepper if needed, taste as you go.
  3. Now is the time to add in those lobster shells, place around the outside of the skillet (for presentation) and sprinkle your Panko breadcrumbs mixture all over the top and season with salt and pepper, once more.
  4. Bake at 4oo degrees for 20-25 minutes on the middle rack or until golden brown.
