Cremini & Shiitake Mushroom Chicken Stew

Camping and Cooking does not get much better or easier than this, think easy prep and easy clean up. I like to cook this simple dish at home also, however it works just as good for when we are camping. In the past I have used the “Original Campbells mushroom soup” for this recipe. 

However when I saw this new Campbell’s Cremini & Shitake Mushroom, I knew it would also work great and tried it on our last cookout. Oh boy was it good, the different type of mushrooms made it even better than the original. 

So if you’re a camper like us then you are well aware that everything tastes much better in the great outdoors, so be prepared to have your socks knocked off with this recipe. 

Camping with a large crowd? No problem simply double this recipe up by using a larger lasagna pan.

Also feel free to add some fresh Cremini & Shitake Mushrooms as well if desired. This would really like this dish up a extra notch.  

Everyone is going to love this recipe, it’s so simple yet so good!

OMG B.A.D SMORES

These OMG B.A.D, S’mores, made with bananas and graham cracker dark chocolates are the perfect camping dessert. Easy to make and sure to impress those hungry campers, why not try them on your next camping trip!

Camping season is upon us and for us Canadians this is a BIG deal! Most of us live for this time of year because our winters are long and it finally means it’s time to get out for some fun in the great outdoors.  

Our Summers go by really fast here too fast and so making good summer memories are a big part of what makes us Canadian. Growing up, we always had s’mores for dessert on our camping trips.

I have very fond memories of these times, some of my best childhood memories are actually from camping with my family. So I truly believe it’s important to create these special memories with your family as much as you can. 

If you have you ever tried graham cracker s’mores and liked them? Well then you are certainly in for a treat!  I like to make these with O.M.G dark chocolates, however you can use any one of there brands.   First you’re going to want to head to the candy isle and pick up a bag of Omg’s dark chocolate graham clusters with almonds. 

Then your going to want to pick a bag of your favorite marshmallows, and a few bananas. Simple enough eh? Trust me your family will have such a great experience eating this, they will be requesting it every camping trip thereafter GUARANTEED!

Now I know what your thinking I must be crazy making something that looks so grotesque. But I promise you i’m not because these “OMG B.A.D SMORES” are delicious.

Not only do we make this breakfast at home quite often, we also  like to make them when we camp too. Whether your hiking, swimming or just going to the office.  It will provide you with a healthy, filling and fueling start to the day. 

This breakfast is sure to satisfy even the hungriest of campers, so why not make it during your next camping trip too! Who said camping food has to be bland? This is fine dining if you ask me, and literally takes less than 10 minutes to make each person’s breakfast to boot. 

So if you do make this for someone while camping they will sure be thanking there lucky stars you came along for this trip. But don’t just take my word for it, try it for yourself.

Cheesy Egg and Zucchini Scramble

We like to eat good when we are camping, can you tell? But we don’t like to spend the whole time cooking and cleaning up, so we try to make it as simple as possible. 

This whole breakfast can be made in one non stick pan and should take you less than 30 minutes to make give or take. 

Packed with so much fiber and protein this meal will be sure to satisfy any hungry camper.

Who said camping food has to be bland? This is fine dining if you ask me, try it yourself on your next camping trip and you decided if it’s a keeper and don’t forget to serve with some bread.

Campfire Chili Poutine

This is one of our camping favorites and it’s really as easy as 1, 2, 3. As you may know Poutine originated in Quebec and has become popular Worldwide. It’s typically served with cheese curds and topped with hot gravy, I like to add chili to it when we go camping. To make this hearty recipe, all you need is some “french fries, canned chili and cheese”, Oh and you can’t forget the gravy. It may not look great but it sure is tasty, filling and is super easy to clean up. Just make sure you purchase the canned chili and gravy, after all this is camping and you want to make it as easy as possible. Also make sure to buy pre shredded cheese for this recipe too, think simple this is camping. Enjoy!

Camping Essentials:

To make the Campfire Chili Poutine:

  1. Lay out your tinfoil in two double layers for extra support.
  2. Cut open your bag of fries (its best not to use the skinny fries here) and pour them onto the tinfoil.
  3. Open your can of Chili, and your can of Gravy.
  4. Pour your Chili over the uncooked fries and then cover with  shredded cheese.
  5. Sprinkle with salt and pepper to taste and close up your package and allow it to cook on the grill for 30-40 minutes.
  6. Once your fries are half cooked, place your canned gravy on the grill and allow it to heat up. Make sure you open it prior to placing on the grill because it will be bubbling and hot once you remove it.
  7. Serve in the middle of the table with forks for all, and pour that hot gravy over-top.
  8. Enjoy!

Rustic Cherry (Galette) pie

I absolutely love cherries and come summer when they are in season and ripe, I like to eat them by the dozen. I’m always finding new ways to cook with them too, however if it’s not summer you can always buy them pre pitted and frozen in your local grocer and make this type of gallette at home.

If you have never made a galette which is a term used in French cuisine to designate various types of flat round or freeform crusty cakes.

Then you are in for a treat, this pie is so easy to make. You are just filling and folding over to create the most delicious dessert, without all the hassle of a typical pie. I like to make this when we go camping, as it can be cooked over the open flame or on a camp stove.

You can also make this at home if you prefer in the oven, just make sure you have pre pitted cherries and pre frozen butter puff pastry prior to your camping trip otherwise pitting cherries or  making pie crust from scratch when camping is no fun.

Then simply allow it to caramelizes over open fire, once cooked drizzle some Maple Syrup over top to sweeten and eat it right from the tin pan. Clean up is a cinch because you will simply toss the tinfoil pie shells in a sealed garbage and then can sit back and watch the fire roar.
