This Authentic Vietnamese Grilled Lemongrass Chicken Vermicelli Salad is super healthy and easy to make. The hardest part is dicing the vegetables the noodle/rice part takes no time and the chicken is simply marinaded prior then grilled and placed over the fresh salad to serve.

Vietnamese lemongrass chicken is a tasty dish made enticingly fragrant with lemongrass and savory spices. And is one of my all time favorite salads, I make this type of salad all summer long and have a few variations of it on this blog. 

It is such a great salad to try if you are looking to add an exotic flavor to your dinner table. 

Traditionally peanuts are added to this dish, I choose not too as I’m not a peanut fan.

What is Lemongrass?

Lemongrass has a citrus and lemon flavor, with a hint of mint. And is very popular in Thai cooking!

Grilled Lemongrass Chicken Vermicelli Salad

Starts by marinating chicken breasts in the fridge the night prior or a min of 1 hour if your short on time.

LEMONGRASS CHICKEN MARINADE

  • 2 large chicken breasts
  • 2 tbsp canola oil
  • 2 tbsp finely chopped lemongrass
  • 2 tbsp lemon juice
  • 2 tbsp soy sauce
  • 2 tbsp light brown sugar
  • 2 tbsp minced garlic
  • 1 tbsp fish sauce

WHAT IS IN A VERMICCILI SALAD

  • Carrots, cucumbers, fresh herbs such as cilantro, shredded iceberg lettuce and a meat protein of your liking.
  • Thai marinade and Vietnamese salad dressing

Vietnamese Chicken Vermicelli Noodle Salad

This Vietnamese Chicken Vermicelli Noodle Salad is made with cooked rice noodles and is filled with chopped fresh vegetables and a marinaded Chicken breast that is tolled with a homemade Vietnamese Salad Dressing also known as Nuoc Mam in Thai.

Taste a little bit of Southeast Asia in your own kitchen with Vietnamese salad. This traditional dish packs an exciting mix of flavors and textures that will satisfy all your cravings.

Vietnamese Vermicelli Noodle Salad can be made with grilled shrimp or beef or even pork if desired as well.

You can find a few of the other variations of this delicious salad bowl right here on my site. I made this recipe before, however the only difference was I added cucumber to the other recipe.

This one has extra lettuce in it. So really, you can use what you have on hand both work just as great.

Vietnamese Beef Vermicelli Salad (bun bo xao)

This simple to make Vietnamese Beef Vermicelli Salad, also known as bun bo xao, is a traditional salad that is served with a dressing called Nuoc Mam. And is a very popular dish that is served across most of Vietnam and even Thailand which has slight variations.

BEEF THAI SALAD DRESSING

Is called “Nuoc Mam” sauce which is a sweet, salty, sour and spicy.

What kind of Beef to Make Thai Beef Salad

You want to use a good quality beef such as sirloin steak. You can purchase it pre-cut or slice it yourself to marinade. 

VIETNAMESE MARINADE FOR BEEF

  1. Start by slicing your beef into thin strips
  2. Place in a bowl and toss in either freshly sliced lemongrass or pureed lemon grass, garlic, fish sauce, lime juice, brown sugar, soy sauce
  3. Mix and marinade a minimum of one hour in the fridge. 

NOTE the more sugar the sweeter the beef will be 

How to make Nuoc Mam / Vietnamese Salad Dressing

  1. 3 cloves garlic (minced)
  2. 1/2 cup cold water
  3. 1 lime (juiced)
  4. 2 tbsp rice vinegar or white vinegar
  5. 1/4 cup fish sauce
  6. 3 tbsp sugar
  7. 1 red chili (de-seeded and sliced, or substitute 2 teaspoons chili garlic sauce or Sriracha)

This makes enough for roughly 2 people.

  • You will want to make two marinades, one for the beef and one for the sauce that you will serve alongside these bowls.

  • The longer you marinade the beef the better. If your making it for dinner then simply marinate it in the morning or the night prior. Then basically the rest of the dish can be pulled together in less than 30 minutes. Easy peazy!

The first time I ordered this salad, I was not expecting much.

That was years ago, I remember the day to a tea. I was with my aunt and she took me to this whole in the wall restaurant that I was not expecting to become my favorite restaurant in town. 

Fast forward 10 years later, you will find me going to the same restaurant ordering the same dishes. 

So, whenever that Thai salad craving hits and I’m not heading out to a restaurant. 

I will simply make this dish in the comfort of my own home.

Duck Soup Recipe

This Duck Soup Recipe is a popular Vietnamese recipe also known as Duck Pho Soup and it is sure to warm you up on a cold day.

Your going to want to cook your duck first and here is a fantastic Chinese Rotisserie Duck Recipe for cooking the perfect duck. 

This duck can also be done in the oven too!

Just be sure to save 1 breasts and the carcass etc once it has cooked for this soup stock that you will make from scratch for this delicious pho style soup!

It is just like something you would order in the restaurants.

Anyone can make Vietnamese food and this soup is no different. The difference between this soup and those that come from the street vendors in Vietnam is the same.

In Vietnam they make the stock from scratch which is very important and absolutely worth it.

Making any kind of Pho Soup from scratch will takes some time. If you are all familiar with beef pho soup then you will know that they simmer the beef bones for hours upon hours prior.

Nice thing is with this soup is that you can set it and forget it, just make sure you are covering the stock pot with a lid while cooking the stock.

My recipe will have this soup on the table for you in under 30 minutes. Once the stock has been made of course.

I encourage you to save your duck carcass for this stock/recipe. If you to are going to make this from scratch!

Otherwise you can look for a pho soup stock pre sold in the stores if you wish it just won’t be as rich as if you make your own stock. 

The more traditional Vietnamese Duck Soup contains radish and bamboo shoots.

My soup has bok choy, green onion and mushrooms instead. 

I just had to warm up to a big bowl of some today!

As I’m currently fighting a cold. Ugh, my first cold of the fall season has hit.

It always hit’s around this time!

So, this is the time of year where many different types of bone broth’s are simmering on the stove top. 

Today, it is duck broth that is so creamy and delicious!

HOW TO MAKE DUCK SOUP BONE BROTH

  • I will use the carcUs from a duck that I either baked or rotisserie the night prior to make the stock.
  • Once the broth has simmered for the half the day, the remaining parts of making the soup come together in no time. 
  • You can also make this soup in your slow cooker or pressure cooker too!

Making this soup and excellent choice for the whole family!

As this recipe, makes enough soup for 3 large bowls or 4 medium sized bowls. 

If your a fan of Vietnamese pho soup!

But have not tried the duck version, then your in for a treat! It offers a delicious oily texture allot like pork pho does. 

HOW TO MAKE DUCK SOUP

ONCE YOU HAVE COOKED EITHER BAKED OR PUT IT ON YOUR ROTISSOIRE 

    1. Put the leftover duck carcass into a medium pot along with all the spices and cover with about 3 liters of water.
    2. Bring to the boil then reduce to a simmer and cook for 2 hours, skimming any scum that rises.
    3. Strain into a bowl removing the meat and large spices from the broth.
    4. Along with separating what meat there is from the bone and then discarding the carcass.
    5. Add the duck meat from the carcass back to the pot with the stock.
    6. Add in the fresh ginger, lemongrass, soya sauce, sugar and fish sauce.
    7. Along with the chopped mushrooms and bok choy and simmer for 15 minutes on low heat. 
    8. Meanwhile, bring another pot of water to a boil and add in the vermicelli rice noodles. 
    9. Simmer on low heat till the noodles separate and are soft. 
    10. Strain the noodles from the water and set aside. (do not reheat the noodles)
    11. While the soup is simmering add in the remaining duck breast and allow it to reheat. 
    12. Remove the breast and slice for serving!

PLATING THE DUCK SOUP

  1. Add the vermicelli rice noodles to each bowl 
  2. Ladle in the soup and add the sliced duck to the top
  3. Garnish with fresh lime wedges

This Duck Soup is allot like basic chicken noodle soup, in the sense that it has bird broth in it. However it has a Vietnamese twist that your sure to love.
