VEGAN MATCHA CHIA PUDDING

This Vegan Matcha Chia Pudding is made with almond milk, stevia, vanilla extract, chia seeds and fresh bananas.

If you’re looking for a quick and healthy breakfast option, then you just found it!

IS CHIA SEED PUDDING HEALTHY

Yes, extremely. And low in fat and calories too!

Because the chia seeds are high in so many nutritionists, such as omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

WHAT IS CHIA PUDDING

Chia pudding is basically made with those amazing chia seeds.

They expand when added to liquid and create a pudding almost some would say tapioca like texture.

I like to eat chia pudding 3x per week and so will make a batch typically on a Sunday night and have a few sitting in the fridge for the week ahead. 

CHIA PUDDING SEED RATIO

When I first made this I was experimenting with that ratio and came up with a 3/4 cup of liquid to 3 tbsp chia seeds is best.

Which will make one serving for someones breakfast!

CHIA PUDDING RECIPE

Once you see how easy this recipe is to make. Your breakfast time will be revolutionized! 

And trust me you do not need to be vegan to enjoy this. I eat this regularly, because it is not only super simple to make.

It also contains a ton of health benefits, due to their high antioxidants count that far outweigh even the blueberries.

HOW TO MAKE MATCHA CHIA PUDDING 

  • You will want to start with adding the Match powder to a large bowl and then with a whisk slowly add in the almond milk. Whisking to ensure the matcha becomes fully dissolved.
  • Then you will whisk in the vanilla and stevia
  • And lastly the chia seeds
  • Stir to combine for several minutes to prevent lumps
  • Then pour into individual cups and place in the fridge overnight to set
  • Cover each bowl that is placed in the fridge longer than 24 hrs to preserve freshness. 
  • On the day of sering, slice a few pieces of a banana on top and serve. 

MATCHA CHIA PUDDING WITH COCONUT MILK

  • Yes, you can use Coconut Milk instead of Almond if you prefer. 
  • Even cows milk will work, however that would not be a vegan option.

Pistachio Cheesecake

What better way to celebrate the holidays than with this Festive No Bake Pistachios Cheesecake that is topped with pomegranate fruit.

Just image serving this no bake pistachio cheesecake at your next Christmas gathering!

It is not only super festive its unique and sure to be a center at the dessert time.

It has a shortbread and graham cracker crust and is filled with pistachio pudding and heavy whipping cream and of course cream cheese. 

There really isn’t much to this recipe.

Simply  follow the basic steps below and you will have the most amazing pistachio cheesecake to serve your guests this year or every year.

This Cheesecake will have you and those who get a chance to have a slice wanting more, nice thing is this 8″ inch cake can serve 12 people.

And you won’t have to spend all day in the kitchen baking, because let’s be honest it’s the holidays and time is short.

Since this is a no bake cake, you are going to want to prepare it the day ahead, then allow it to set in the freezer for at least 6 hours prior to serving.

Indie, says make sure you defrost the cheesecake for anywhere from 20 – 30 minutes on the counter prior to slicing and serving. This way you will have a creamy cheesecake, she really likes it creamy. During the defrosting time, you can start to decorate it with the pistachios and pomegranate seeds.

Simply leave the cheesecake in the cheesecake pan on the countertop, and start by placing your seeds all around the outside covering the rims with seeds.

Then crush up the pistachios with a large knife, and sprinkle all over the top. Once the cake is defrosted fully, remove the cheesecake pan and slice to serve.

Elf Cookies

Merry Christmas and Happy Hanukkah! If you have not tried Elf Cookies you are in for a treat. 

Right about now, Santa is up in the North Pole working hard in his workshop to ensure all the good boys and girls receive their toys on time. 

These cookies are very similar to the cookies Mrs. Claus would serve the Elves in Santa’s workshop during the Christmas season.

Mrs. Claus is baking up the most delicious foods  that will help to sustain everyone during this busy time of year. Ever wonder how the elves get their energy? It’s by eating elf cookies of course.

Not only are these cookies super moist and tasty they’re also very healthy for you.

Packed full of  antioxidants, from the The Matcha powder which also known to enhance a calming effect because of the amino acid L-Theanine, which helps with the production of dopamine and serotonin. 

These two chemicals serve to enhance mood, improve memory, and promote better concentration something that can benefit everyone! This offers just the right amount of sustainable energy that helps to keep the elves going all night long. Serve with a light cream cheese topping, and some green sprinkles, just make sure you allow the cookies to fully cool down before hand.
