Pumpkin Hamburger Mac and Cheese

Looking for an awesome way to use Pumpkin puree? Well look no further than this delicious Pumpkin Mac ‘ N Cheese with Hamburger recipe. 

If you and your family like boxed hamburger helper, then trust me you have not tried nothing yet.

Because I do to but this stuff is does not even compare!

It gives it that extra creaminess everyone craves with a health benefits of pumpkin! 

So I hope the next time that craving hits for some good old mac n cheese? or some gold old fashion hamburger helper.

You think of this recipe instead, because it’s that much better and healthier for you.

Plus adding in the pumpkin helps to stretch out the meal even further.

So if your feeding a bunch of little ones, you will ample to serve.

This recipe definitely cannot compare to any of the box stuff I just mentioned above.

And that is because this is homemade and you have the say in what kind of ingredients are used.

Also we are adding a whole cup of Pumpkin puree which gives it so much extra flavor. 

Did you know Pumpkin puree is very good for you? It’s true, for one it helps to regulating blood pressure and is good for the heart.

Not The mention is packed full of feel good fiber, potassium, and vitamin C. So this Mac n Cheese is actually very good for you.

Once this recipe has been cooked, feel free to add 1 cup of panko bread crumbs on top along with some more cheddar cheese and bake it in the oven at 400 f for 15 minutes for something extra special.  Totally depends on the time you have and what kind of dinner your wanting to serve!

Also you can go ahead and bake two batches. Just double the recipe with my easy to use recipe adjuster above and then simply use two baking pans.

Beef Noodle Casserole with Kale

Looking for an awesome kid friendly hamburger recipe? Well look no further than this delicious Beef Noodle Casserole with Kale dish.

This homemade recipe is very similar to “hamburger helper”. So if you and your family have like boxed hamburger helper in the past, then trust me you will love this.

If your not familiar with hamburger helper than may I ask where have you been the past few decades? Just kidding. 

As that boxed stuff was definitely was and still is a staple food in most North American homes. Now I do not mean to be of insult, because perhaps you have never heard of it or have lived in North America that long.

And so in that case you would not know what im talking about at all. For the rest of you i’m sure memories of the stuff are flooding into your thoughts by now.

Well this recipe is similar to that boxed stuff, however mine is way better and healthier for you. And that is because we are making it from scratch verses a boxed brand which uses way to much salt. Plus we are adding fresh kale and real cheddar cheese, hello!

So believe me when I say that this recipe definitely cannot compare to any of the box stuff I just mentioned. 

This recipe will feed a family of 8 or if there is less of you, feel free to freeze some for the days to come.

Also you can go ahead and bake two batches. Just double the recipe with my easy to use recipe adjuster above and then simply use two baking pans. This recipe does well as leftovers and can be frozen into a few meal preps.

Note: You can use beef stock to replace the milk if desired.

Chipotle Burgers

Here I am cooking again with one of  my favorite peppers the adobo pepper. This is by far one of our favorite ways to make burgers.

I like to cook these burgers in my cast iron skillet, however you can use an indoor or outdoor grill for this recipe as well. I find the cast iron skillet sears the meat perfectly creating a strong burger that doesn’t fall apart as easily as they could on a grill.

Don’t skip on the adobo sauce it really makes this burger stand out. Bubba says, you can find it in any international aisle at your local grocer, typically near the Mexican food area.  Serve alongside a delicious potato salad, see recipe below for that one.

Mexican Dried Chipolte Chilies, Did you know Chipotles are actually smoked dried jalapeños?   

This is what you will be looking for, same stuff just in a can with some sauce.

 

Optional *add 1/2 tsp of adobo sauce from the can per burger, for extra heat. *Layer on the cooked onions, along 1/2 tsp of adobe sauce from the can per burger. Top with the condiments that you like, such as Lettuce, Mayonnaise, Mustard, Ketchup, Relish, Pickles, Raw Onions etc.

Want to make a bunch of extra hamburgers to freeze for another time? Simply lay out your shaped burgers on a cookie sheet, lined with parchment paper and freeze. After frozen solid, stack into an extra-large freezer bag and freeze till your ready to use.
