World’s Best Lobster Bisque Recipe

Ingredients

  • 2 cups cooked lobster meat (tails or claws, chopped)
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 small carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 tbsp tomato paste
  • ½ cup dry white wine
  • 3 cups seafood broth (or chicken broth)
  • 1 cup heavy cream
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt & pepper to taste

Instructions

    Sauté the aromatics in a large pot, melt butter with olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook for 5–7 minutes until softened.

  1. Add tomato paste
    Stir in tomato paste and cook for 2–3 minutes to deepen the flavor.
  2. Deglaze with wine
    Pour in white wine and simmer for 3–5 minutes until slightly reduced.
  3. Add broth & simmer
    Stir in seafood broth, paprika, thyme, and optional lobster shells. Simmer for 15–20 minutes.
  4. Blend until smooth
    Remove shells (if using), then blend the soup until silky smooth using an immersion blender or standard blender.
  5. Add cream & lobster
    Return soup to low heat. Stir in heavy cream and lobster meat. Simmer gently for 5 minutes.
  6. Season & serve
    Taste and adjust with salt, pepper, and optional cayenne. Serve warm.
