I’m always looking for vegetaeian dinner options for my family and this is one of those go to recipes that I like to prepare when I am strapped for time.

It truly is a one baking pan dump kind of meal that is super easy to make and absolutely delicious all at the same time.

Sometimes, I will add diced chicken or sausage and bake it longer if I am in the mood for a non vegetarian option.

Vegetarian Gnocchi recipe

Vegetarian Gnocchi recipe

Yield: 2
Cook Time: 30 minutes
Total Time: 30 minutes

Ingredients

  • 2 tbsp olive oil
  • 1 package of Gnocchi 
  • 2 cups Spinach
  • 2 cups mozzarella cheese 
  • 1 pint Baby tomatoes
  • 2 tbsp Tomato paste
  • 3 cups Vegetarian broth 
  • 1 tbsp Italian seasoning 
  • 1 tsp Garlic powder 
  • 1 tsp Onion powder
  • 1/2 tsp Pepper

Instructions

  1. In a medium sized bowl, mix the tomato paste with vegetable stock till blended.
  2. Toss in the seasonings and stir some more
  3. Toss in the spinach, tomatoes and uncooked gnocchi along with the olive oil
  4. Stir again to combine and place into a baking dish Top with shredded mozzarella and parmesan cheese
  5. Bake in a pre-heated oven at 350 f and bake for 30 minutes
  6. Broil the last few mins to ensure the cheese is lightly browned
  7. Enjoy!
