Vegetarian Birria Tacos
These easy Vegetarian Birria tacos are a tasty and healthy alternative to traditional meat tacos, and are made with fried pinto beans.

If you’re a fan of traditional tacos but want to try something new, vegetarian birria tacos are an excellent choice. You can also make them Vegan by adding a vegan cheese as it’s replacement.
Vegetarian birria tacos may have started in Mexico, but they’re now a global phenomenon.

I served these tacos with a Vegetarian stock then added some more fresh cilantro and onions to enhance it’s flavor. It is a great side soup or dip to accompany these types of tacos.

The Health Benefits of Eating Vegetarian Birria Tacos
Not only are vegetarian birria tacos delicious, they’re also packed with health benefits. Their high fiber content to their ability to reduce inflammation, these tacos are a great addition to any diet.
WHAT DOES BIRRA MEAN IN TACOS
HOW TO MAKE VEGETARIAN BIRRIA TACOS
- Start by adding a can of pinto beans to a pot and cook over medium heat. Add in half a diced onion, 3 whole garlic cloves, 1 adobe pepper, cumin and a pinch of salt.
- Simmer for 15 minutes, then once the water has evaporated.
- Mash with a potato masher then add 1 tbsp of olive oil to make it extra smooth.
- Next in a large non stick frying pan add 1 tbsp of cooking oil and 1 tortilla shell and cook over medium heat till lightly browned, Flip the shell over and then add in some cheddar cheese, fill on top with the mashed pinto beans, chopped cilantro and onions.
- Fold over the shell with a fork or spatula.
- You may want to add more oil, flip the shell over again and make sure all sides are lightly browned before removing.
- Repeat STEPS 4-6 till all tacos are cooked.
- Top the tacos with some more fresh cilantro and onions.
- Meanwhile, heat up some Vegetable stock in a small sauce pan then serve alongside if desired.

Vegetarian Birria Tacos
Serve alongside a hot vegetarian soup for dipping!
Ingredients
- 1 can of pinto beans
