This Vegetable Chop Suey recipe is made with mung beans, mushrooms, cabbage and carrots and is ready in less than 30 minutes from start to table.

INGREDIANTS IN CHOP SUEY

You can put just about any Chinese vegetables that you have on hand into chop suey!

Since this is a vegetarian recipe, I have omitted the meat protein.

I used for this recipe: Mushrooms, Mung Beans / Bean Sprouts, Cabbage, Onions. 

Other vegetables that work well in chop suey are: celery, zucchini, mushrooms, peppers.

SAUCE

  • Corn starch
  • Hot water
  • Oyster sauce
  • Shaoxing wine
  • Soya sauce
  • Pepper

HOW TO MAKE VEGETRIAN CHOP SUEY 

  • Add 2 tbsp of vegetable oil to a hot wok to sauté the garlic and sauté for a min till fragrant then set aside.
  • Back in the wok add the vegetables, leaving the mung beans out and toss in the sauce
  • Toss to coat then add back in the chicken and cook till the vegetables are near soft
  • Toss in the mung beans and cook all together till the mung beans are transparent
  • Enjoy with white rice!

Ingredients

  • Vegetables
  • 1 carrots, diced or sliced
  • 1 onion, diced or sliced
  • 1 cup cabbage, diced or sliced
  • 2 garlic, minced
  • 1 package of bean sprouts
  • Sauce
  • 2 tbsp light soya sauce
  • 2 tbsp oyster sauce
  • 1/2 tsp pepper
  • 5 tbsp water
  • 1 tbsp cornstarch
  • 1 tbsp hot water
  • 4 tbsp vegetable oil

Instructions

  1. Add 2 tbsp of vegetable oil to a hot wok to sauté the garlic and sauté for a min till fragrant then set aside.
  2. Next add the vegetables, leaving the mung beans out and toss in the sauce
  3. Sauté for 5 minutes then
  4. Toss in the mung beans and cook all together till the mung beans are transparent
  5. Enjoy with white rice!
