When making this soup, you will want to add a bit of mirin which is a Japanese clear seasoning along with a dash of soya sauce to the soup stock to serve. It makes it that much more full of umami flavor.

WHAT IS UDON NOODLE SOUP

It is a traditional Japanese soup that is served in a clear broth which is made up of dried fishes, mirin and soya sauce. Then has udon noodles added to it and sliced meat or seafood if desired.

CAN YOU FREEZE UDON NOODLE SOUP

Yes, once it is made. You can easily freeze the stock. However, not the cooked noodles in the soup. It will absorb to much of the liquid.

HOW TO MAKE UDON NOODLE SOUP AT HOME

Takes literally 10 minutes to make!

Ingredients

  • 1 bag Umami Dashi
  • 1/2 tsp mirin
  • 1/2 tsp soya sauce
  • 20 oz water
  • 1 package of udon noodles
  • 2 shrimp
  • 1 scallion, diced

Instructions

  1. In a pot add 20oz water
  2. Add in the dashi soup stock tea bag
  3. Soak for 2-3 minutes Remove the bag
  4. Add in the udon noodles, mirin, soya sauce, shrimp and scallions
  5. Cook over medium heat till the noodles come apart and the shrimp is pink/cooked just a couple minutes.
  6. Enjoy
