Bring a pot of salted water to a boil.

Cook diced potatoes for 8–10 minutes until fork tender.

Drain and set aside.

  • 1 cup sharp cheddar cheese, shredded
  • 1 tbsp fresh dill, chopped
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste
