  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 1/2 cups fresh or frozen blueberries
  • Optional: 2 tablespoons chopped walnuts or pecans

Instructions

    Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C).

Lightly grease an 8x8-inch baking dish or similar-sized casserole dish.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt.

    Stir until evenly combined.

Step 3: Mix the Wet Ingredients

In a separate bowl, whisk together the eggs, milk, maple syrup, vanilla extract, and melted butter.

    Step 4: Combine

Pour the wet ingredients into the oat mixture and stir until everything is well incorporated.

Gently fold in the blueberries and nuts, if using.

    Step 5: Bake

Pour the mixture into the prepared baking dish and spread evenly.

Bake for 35 to 40 minutes, or until the centre is set and the top is lightly golden brown.

    Step 6: Cool and Serve

Allow the oat bake to cool for 5 to 10 minutes before slicing.

Serve warm as is or top with a spoonful of Greek yogurt, extra blueberries, a drizzle of maple syrup, or a splash of milk.
