You can omit the cream cheese and add cubed goat cheese with the spinach prior to baking for another way to make this delicious side dish!
HOW TO MAKE VEGETARIAN STUFFED PORTOBELLO MUSHROOMS
- Start by placing four large portabella mushrooms into a baking dish. Remove the inner stem first, this allows you to stuff them.
- Then strain out your pre frozen spinach in a strainer and mix in one cup of melted cheese to that in a separate bowl.
- Add in the pepper, salt and garlic powder.
- Stir all together and fill the mushrooms.
- Top with your favorite crushed bread crumbs.
- Drizzle with olive oil.
- Bake at 350 f for 25 minutes and serve immediately.

Ingredients
- 4 Brown Portabella Mushrooms, stems and gills removed
- 3 tbsp olive oil
- 2 cups of defrosted frozen spinach squeezed and strained dry.
- 1 cup of plain cream cheese, melted
- 1/2 cup crushed bread crumbs
- 1/2 tsp Garlic Powder
- 1 /2 tsp Italian Seasoning
- Salt & Pepper to taste
Instructions
- Start by washing and removing the stem from the inside of the mushroom. Then pat the mushroom dry with a cloth towel.
