However, in most cases the noodles are made from scratch. Other than that all the seasonings are the same. Which makes for the most memorable and delicious chili oil noodles.

If you want the noodles soaking in a chili oil broth, simply add more vegetable or chicken stock.

Now, I love chili oil. However, when it comes to making these noodles I want more spice. So i also add 1/2 tsp of red chili pepper flakes. Depending on your spice tolerance you can omit that part or enjoy like I do.

Spicy Garlic Chili Oil Vermicelli Noodles

Ingredients

  • 300 grams Vermicelli rice noodles
  • 5 cups water
  • 2 tbsp chili oil
  • 5 tbsp sesame oil
  • 1 clove garlic
  • 1/2 tsp red pepper flakes
  • 1 cup cilantro, chopped
  • 2 green scallions, diced
  • 2 scrambled eggs
  • 1/2 cup chicken stock

Instructions

  1. Start by cooking the rice vermicelli according to package instructions.
  2. Be sure to immediately strain and place in a pot of cold water to chill, strain and set aside
  3. Meanwhile, in a frying pan add 1 tbsp of sesame oil and scramble the eggs then set aside
  4. In the same frying pan, add more sesame oil and fry the garlic till fragrant
  5. Add in the chicken stock, remaining sesame oil and chili oil
  6. Toss in the chopped vegetables and sauté till wilted
  7. Add back in the noodles and serve with fresh lime wedges
