Spicy Enoki Mushrooms recipe
These Spicy Enoki Mushrooms recipe is super healthy and packed full of nutrition that serves as a excellent snack or side dish. It is made with pre-sautéed mushrooms that simmered in a delicious Gochujang / kimchi sauce.
WHAT IS GOCHUJANG
It is a KOREAN Red Pepper paste that comes in a small container and can be added directly to soups, stews etc.
Is Gochujang Spicy
It has a sweet savory spice flavor.
WHERE TO BUY GOCHUJANG
You can find this at Walmart these days and most larger supermarkets. If not, you can be sure to find this at your local Asian grocer. Just make sure your buying the paste vs a pre-made sauce. It is authentic that way!
HOW TO COOK ENOKI MUSHROOMS
- First you want to get your hands on some fresh enoki mushrooms
- Enoki mushrooms are best fried, this way they become soft and browned yet remain crunchy enough to enjoy!
- Properly cleaning them is important, be sure to chop off the ends about 2 inches worth. You can even clean that part off better and cook but I like to clean the ends off and I will cook it for my dog and give to him. These mushrooms are safe for dogs and packed with plenty of nutrition. Just be sure not to give garlic or any spices to your pets as that is toxic.
- Then sauté the mushrooms in butter till soft and tender, the tops will remain somewhat crunchy regardless.
HOW TO MAKE Spicy Enoki Mushrooms recipe
- Start by cutting off the end parts of the enoki mushrooms
- Then pull them apart and rinse throughout under tap water
- In a large skillet add the butter and melt
- Lay out flat the mushrooms
- SAUTE over low- medium heat for 10 minutes 15 minutes
- Turn over and sauté the mushrooms for 5 more minutes
- Remove the mushrooms from the skillet
- Add 1/2 cup water and mix in the Korean gochujang paste and kimchi
- Once it has mixed into the water thoroughly add in the mushrooms
- Simmer for a few minutes to serve
- Top with fresh sliced green onions

Ingredients
- 1 package of Enoki Mushrooms
- 3 tbsp butter
- 2 garlic, sliced
Instructions
