Simple Greek Lemon Chicken Soup
This Simple Greek Lemon Chicken Soup is made using a pre-cooked shredded chicken and a homemade chicken bone broth stock, along with chopped celery, onions, carrots, rice and lemon juice. It is packed full of nutrition and is fresh in taste as it has the addition of fresh lemon juice incorporated during the end of the cooking process.
If your looking for a different take on the more traditional chicken noodle soup recipes then you just found it. This recipe incorporates rice instead of noodles and is fresh since it has the addition of fresh lemon juice.
I made this today while I was having a craving for some home cooked chicken soup. But I knew i did not want any noodles in it or for it to be plane jane. So i pulled out my frozen pre-made chicken bone broth and a lemon to make this a bit different.
CAN GREEK LEMON CHICKEN SOUP BE FROZEN
Yes, being this soup has no egg or cream it will freeze well in an air tight container up to 3 months.
How to make Greek Lemon Chicken Soup
In order to make this simple / quick Greek lemon chicken soup. You will want to start with a pre made chicken stock. You can use Campbells of course or better yet a chicken bone broth would be best and is what I use.
- Start by dicing your celery, carrots, onions then set aside. Once cleaned, add them to a pan with 2 tbsp of butter and sauté for 5 minutes till soft. Then set aside!
- Meanwhile, add your pre-made chicken bone broth or chicken stock to a large pot
- Toss in some pre-cooked shredded chicken (you can always sauté prior 2 chicken breasts for this and shred with a fork) Add your Greek seasonings and 1 cup of rice
- Simmer covered on low- medium heat and cook till the rice is tender, around 7-8 minutes. Turn off the heat and squeeze a lemon into the soup
- Serve hot and enjoy!
WHAT IS GREEK LEMON CHICKEN SOUP CALLED
Traditionally this soup is made with an egg that is whisked into chicken stock. Which is called Avgolemono Soup which translates to “egg-lemon” . However with this recipe, we are keeping the Greek Seasonings and rice, lemon flavors but omitting the first element to create a more Simple Greek Lemon Chicken Soup

- 2 chicken breasts, cooked and shredded

- 2 carrots, diced
- 4 celery stock diced
- 1 tbsp Greek Seasonings
- 1 lemon juiced
