Simple Asian Carrot Salad

I first tried this Simple Asian Carrot Salad recipe early this year and have tried to make it several ways to see which recipe was my favorite so that I can share it with you!

This is my all time favorite way to make this carrot salad, and the same goes for everyone in my house. Even our 4 year old asks for this salad often, which says a lot about the taste.

You can either make it in RIBBONS s or you can shred it with a SPIRALIZER both ways taste the same just the consistency of the salad varies.

WHAT IS CARROT SALAD

It is a salad consisting of primary carrots which are either shredded very fine or into ribbons which I prefer. It is then best marinaded the day prior in a carrot dressing for maximum flavor.

Carrots are excellent for your eyes as it has tons of beta- carotene and many vitamins such as A. Not to mention this salad is packed full of fiber and supports gut health and hormone balance.

If you have never liked carrots before, or have a hard time eating them. I highly recommend making this salad because I am more than certain you will be making it more often than you could ever have imaged. Yes, friends it is that good!

HOW TO SHRED CARROTS FOR CARROT SALAD

You will want a potato peeler or hank cranked shredder of some kind. I prefer to do it by hand with a potato peeler and will shred it into ribbons.

HOW TO MAKE CARROT SALAD

  • Start by making the carrot salad dressing then set aside
  • Next is making the salad. First shred the outer skin off the carrots and discard.
  • Then with a peeler of your choosing, peel the carrots by holding the tops first and shredding downward. Place all the carrots ribbons in a large bowl and once shredded.
  • Rince them off and place back into the large bowl.
  • Pour over the carrots salad dressing and toss well to combine
  • Chill which will allow for better marination of the carrots salad before serving!

You can substitute the rice vinegar easily for apple cider vinegar if you choose

This Simple Korean Carrot Salad recipe is made shredded carrots that are marinaded in carrot salad dressing of sesame oil, rice vinegar, soya sauce, honey and a few seasonings that make for the most sweet, tangy flavor packed salad that is sure to become a favorite in your home.

Ingredients

  • 6 large carrots, shredded and then peeled down completely
  • CARROT SALAD DRESSING
  • 1/4 cup sesame oil
  • 1/4 cup water
  • 2 tbsp rice vinegar or apple cider
  • 3 tbsp soya sauce
  • 5 tbsp honey
  • 3 garlic cloves, minced
  • 1/2 tsp ginger powder
  • 1/2 tsp garlic power
  • 1/2 tsp pepper
