Shanghai (Fried) Pork Chili Oil Noodles
These Authentic Shanghai (Fried) Chili Oil Noodles are made with minced pork that is cooked into a spicy yet savory soya chili oil sauce and is quick and easy recipe that is ready in under 30 minutes!
What makes this recipe, slightly different than most Shanghai noodle dishes is the addition of sesame oil and chill oil. Producing a more savory and spicy dish to savory and sweet. I also omit sugar and allow the oyster sauce to be the main sweetener.
So this dish is savory, spicy and a bit sweet.
What are Shanghai Noodles
They are a thick wheat based noodle, that is best cooked fresh. However, you can buy them dried out too.
WHERE TO BUY SHANGHAI NOODLES
The brand I used is seen below and can be found in many Asian markets OR even in some large box type stores in the fresh isle next to wonton wrappers.
HOW TO MAKE SHANGHAI NOODLES SAUCE
- Soy Sauce
- Oyster sauce
- Chicken Stock or Vegetable Stock
For this recipe, I added the addition of sesame oil and red chili oil as I like to added heat!
HOW TO MAKE SHANGHAI NOODLES
- Simply boil, strain and set aside
- Chop any vegetables and cook any meat prior to adding it to the cooked noodles
- Simmer all together in the sauce and serve hot!

Shanghai (Fried) Pork Chili Oil Noodles
Ingredients
- 1 package Shanghai Noodles
- 2 pork sausages, diced
- 4 green onions, diced
- 2 tbsp sesame oil
- 1 tbsp chili oil
- 1 tsp soya sauce
- 1 tsp oyster sauce
- 1/2 cup chicken or vegetable stock
- 1/2 pepper
Instructions
- Start by cooking the Shanghai noodles in boiling water. My noodles take 4 minutes, then strain in cold water and set aside
- Then fry the pork till browned and cooked throughout and place on a cutting board and chop finely
- Next, diced your green onions
- Add the green onions to the cooked pork and sauté on low while you make your sauce Whisk all the sauce ingredients together then add the cooked noodles back to the frying pan
- Pour over the sauce and simmer on low heat for a few minutes till all the flavors combine
- Enjoy!
