Seafood Miso Udon soup
This Seafood Miso Udon soup recipe is full of umami flavor as it is made with a seafood stock that comprises lobster, shrimp, miso, instant dashi along with bok choy and mushrooms. It is as good as any restaurant soup you may order but is ready at home in under 30 minutes! You can even use ramen in replace of the udon noodles if desired.

You can make it from scratch like the Japanese do or you can take the easier route and pre-purchase the same ingredients all in a tea bag and make it this way! You can search the item name below on AMAZON and have this delivered to your home.
Dashi – Umami Powder Soup Stock – Japanese Food, Bonito Flakes, Kelp, Mushroom
I much prefer to use the Japanese Umami Dashi soup stock mix as it allows me a to produce an authentic stock in minutes vs hours.
Then once you steep it like a teabag in the hot vegetable stock along with the lobster and shrimp for 3 minutes. Simply remove the bag and add in some miso paste and cook till hot then serve!

I highly recommending trying instant dashi for any Japanese based soup recipe you are to make at home. Or you can omit and use soya sauce in replace and mirin if desired!

Seafood Miso Udon soup
Ingredients
- 2 1/2 cups Vegetable stock
- 1 Lobster tail
- 2 Whole shrimp
- 1 tsp Miso Paste
- 1 packet of Instant dashi stock
- 1 cup bok choy
- 4 whole mushroom, diced
Instructions
- In a medium stock pot add in some vegeatble stock along with 1 lobster tail and shrimps.
- Bring to a medium boil and cook the seafood, remove then set aside the seafood only
- Then in the broth add in 1 dashi tea bag and simmer on medium - low heat for 3-4 mins then remove the bag and trash it
- In the same stock, add in the miso paste and mix to combine
- Add in the udon noodles, bok choy and mushrooms and simmer for 5 minutes till tender
- Toss back in the seafood and serve hot
- Enjoy!
