Seafood Medley Recipe with Rice
This Seafood Medley with rice is super simple and inexpensive recipe to make.
This recipe feeds two people, if your wanting to feed more simply double the recipe up!
WHAT IS SEAFOOD MEDLEY
Seafood Medley contains a small bag of seafood mixes. Such as:
- Shrimp
- Squid
- Clams
- Mussels
- Scallops
WHERE TO BUY SEAFOOD MEDLEY
Seafood medley comes pre packaged in the freezer isle of most grocery stores.
I like to make these type of dishes at home. As it saves us a ton of money vs dining out. I image this dish would cost upwards of $20 per person or more in a fine dining Italian restaurant.
However you can make this for a fraction of the cost.
JASMINE rice goes so well with this seafood medley, however you can also serve it over a bed of cooked rice noodles or udon noodles if you so desire.
HOW TO MAKE SEAFOOD MEDLEY
- You will want to start by making the rice “I like to use my rice cooker”.
- Then make the sauce, then set aside.
- Then you will want DEFROST the seafood medley.
- In a frying pan/wok add 1 tbsp of butter and add the seafood medley.
- Stir Fry for 2 minutes before adding in the chopped garlic and another 1 tbsp of butter.
- Once cooked, squeeze the juice from one lemon over top then remove from the heat.
- Serve the rice then top with the seafood medley, enjoy!
IS SEAFOOD MEDLEY HEALTHY
Yes, it seafood is healthy and the whole dish is low in calories but high in protein and nutrients.
Not so into some of the seafood that comes in a medley package? Then simply use scallops or shrimps and make the same dish that way.
Easy, tasty and oh so simple.
