Savory Broccoli Cheddar Breakfast Egg Muffins

Savory Broccoli Cheddar Breakfast Egg Muffins

Cook Time: 30 minutes
Total Time: 30 minutes

Ingredients

  • 12 eggs - 2 per cup
  • 2 cups broccoli forests
  • 2 cups cottage cheese
  • 2 tbsp milk
  • 2 cups of shredded cheddar cheese
  • SEASONINGS
  • Salt and pepper to taste
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder

Instructions

  1. Spray 6 large cup muffin tin with cooking oil
  2. Then in a large mixing bowl, add all the eggs and seasonings and beat all together
  3. Add in the milk, cottage cheese and shredded cheddar cheese
  4. Toss in the finely chopped broccoli and combine
  5. Pour into the large muffin tins
  6. Top with a little more cheddar cheese
  7. Bake in a pre-heated oven at 350 F for 30 minutes or until fully cooked and enjoy!
