This Healthy Rotisserie Chicken Soup (No Noodles) is packed full of flavor and very nourishing to the body and soul. I like to make a big pot of this soup ever so often as it is simple to make and packs a punch of flavor.

WHAT TO DO WITH ROTISSERIE CHICKEN LEFTOVER
Make this soup 🙂 This soup utilizes the bones of your leftover Rotisserie chicken to make a chicken bone broth for the most amazing soup. And cook the veggies along with the chicken carcass to make my stock.
Whenever I or someone I love gets sick with a cold. The first thing I do is make a large batch of this type of soup.
And the best way and cheapest way to make this soup too, is to use the meat and bones from a leftover rotisserie chicken from the night before.
Two meals in one. IT’S A WIN WIN!
USING ROTISSRIE CHICKEN FOR SOUP
It is the best way to use a rotisserie chicken since the meat is pre-cooked and already seasoned. Then you can use the bones to make the broth!Â
ROTISSERIE CHICKEN SOUP WITHOUT NOODLES
There are a few versions of this kind of of soup out there, this one is a little different as it uses the leftover bones for the chicken broth. And has no noodles in it, of course you can add them if you’d like. Just make sure you add more stock as the noodles does soak up a lot of it in the cooking process. Or pre-make the noodles on the side if desired!
And as you may know bone broth is said to be nature’s pharmacy.
And so this soup has everything you need in it to ward off any type of cold or flu.
It defiantly will help your body rests and works to get better.
WHAT IS IN ROTISSERIE CHICKEN SOUP
This soup is packed with garlic, onion, ginger, turmeric spices that are sure to make you feel better feel. The benefits soon after sipping this warm soup will be felt all over. Want to spice it up? Simply add some cayenne pepper which is also very healthy for you!
Serve alongside with a lemon wedges if desired for an extra punch of vitamin C, I hope feel so good after sipping this warm bowl of soup!
How To Make Rotisserie Chicken Soup
- Start by shredding all the chicken meat of your cooked rotisserie chicken then set aside
- Then place the remaining chicken carcass into a large stock pot and add 8 – 10 cups of water or to cover the bones completely.Â
- Add in your diced onion, carrots, garlic and ginger
- Simmer on low to medium heat covered for 45 minutes. Discard the bones and carcass along with veggies (strain it with a colander saving the stock)
- Meanwhile, chop green onions and toss into the stock along with all the seasonings. Simmer on medium – low covered for the remaining 10 minutes
- Squeeze the juice from half a lemon into the soup and stir.
- Enjoy hot, allowing your body to heal itself.
You can add more vegetables you like, such as:
- KALE
- SPINACH
- CELERY
Or starches
- RICE
- ORZO
- NOODLES
ROTISSERIE CHICKEN SOUP WITH RICE
Yes, go ahead and add rice or noodles during the cooking process if you’d like.
Just make sure that you are following the directions on the package for the cooking times. And do not add more than 1/2 a cup otherwise the liquid will be all gone.

Ingredients
- 8 - 10 cups of Water
- 1 carcass of a Rotisserie chicken
- 1/2 lemon, juiced
- 1 large onion, diced
- 1 large carrots, diced
- 5 cloves garlic, diced
- 1 tsp fresh ginger Root
- All the rotisserie chicken meat, shredded
- 2 tbsp Butter
- 2 green onions , chopped
- SPICES
- 1/2 lemon, juiced
- 1 chicken stock cube
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp Italian seasoning
- 1 tbsp turmeric powder
- 1 tbsp fresh parsley
Instructions
- Start by shredding all the chicken meat of your cooked rotisserie chicken then set aside
