You can use just about any noodle for this recipe, just keep in mind that some noodles will suck up the majority of that delicious broth. That is why I much prefer to use UDON noodles as they won’t.

So, if you want to use another noodle, I highly recommending cooking it on the side and adding it in in once everything is cooked and ready to serve.

WHAT IS ROTTISERRIE CHICKEN

It is a whole chicken that is cooked prior to purchasing and can be found in most grocery stores today!

HOW TO MAKE ROTISSERIE CHICKEN SOUP

  • You will want to remove all the meat from the bones and cover the bone with water to create the stock.
  • Once the stock is create, simple add all the ingredients (see recipe card below to a stock pot and simmer till ready!

HOW LONG IS ROTISSERIE CHICKEN SOUP GOOD FOR

  • You will want to prepare the soup the day you buy the cooked chicken
  • Then once cooked, you can store in the fridge in an air tight container up to 3 days

Rotisserie Chicken Lemon Noodle Soup

Rotisserie Chicken Lemon Noodle Soup

Ingredients

  • 1 rotisserie chicken
  • 9 cups water
  • 2 tbsp butter
  • 2 udon noodle packages
  • 2 carrots, cubed
  • 1 lemon
  • 2 onions
  • 4 cloves garlic, minced
  • SEASONINGS
  • 1 maggi or Knorr's cube
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme

Instructions

  1. Start by removing all the chicken meat from a pre-cooked rotisserie chicken.
  2. Then place the bones and skin of the chicken into a medium pot and cover with water (1 inch above the bones)
  3. Add a halved onion to the pot Simmer on low-medium heat covered for 40 mins
  4. Strain the stock from the bones and set aside
  5. Meanwhile, add 2 tbsp of butter to the same pot
  6. And sauté 1 medium diced onion till it is transparent, add in the minced garlic and do the same
  7. Toss in all the dry seasonings and diced carrots and pour back in the stock, you may want to add more water here
  8. Add in the cubed rotisserie chicken meat along with udon noodles
  9. Simmer covered over medium low heat for 15 minutes
  10. Squeeze in the juice of a whole lemon and simmer for another 5 minutes to serve
