CAN BREAKFAST EGG MUFFINS BE FROZEN

We will make a batch of 6 or 12 and enjoy them over a few days and freeze the rest. Store and freeze in an air tight container up to 3 months! Simply, thaw them in the fridge overnight to reheat that very day.

HOW TO GET BREAKFAST EGG MUFFINS TO NOT STICK

Be sure to coat the baking tin with oil, we like to use a spray oil as it is quick and easy.

High - Protein Savory Breakfast Egg Muffins

Yield: 6
Cook Time: 30 minutes
Total Time: 30 minutes

Ingredients

  • 12 eggs - 2 per cup
  • 1 cups of baby cherry tomatoes, diced fine
  • 12 strips of bacon or ham
  • 2 cups cottage cheese
  • 2 tbsp milk
  • 1 cup of shredded cheddar cheese
  • SEASONINGS
  • Salt and pepper to taste
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder

Instructions

  1. Spray 6 large cup muffin tin with cooking oil
  2. Place 2 slices of bacon or ham around the outer part of the muffin tin
  3. Then in a large mixing bowl, add all the eggs and seasonings and beat all together
  4. Add in the milk, cottage cheese and diced cherry tomatoes
  5. Mix to combine, toss in half cheddar cheese saving some for the top Pour into the large muffin tins
  6. Top with a little cheddar cheese
  7. Bake in a pre-heated oven at 350 F for 30 minutes or until fully cooked and enjoy!
