Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 2 eggs
  • 3/4 cup milk
  • 1/4 cup olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup finely shredded zucchini
  • 1/3 cup finely diced tomatoes
  • 1/4 cup pizza sauce
  • 1/3 cup mini pepperoni
  • Extra mozzarella cheese for topping
  • Fresh parsley for garnish (optional)

Instructions

    Step 1: Prepare The Vegetables

    Finely shred the zucchini and use paper towels to squeeze out any extra moisture.

    Dice the tomatoes into very small pieces.

    Step 2: Prepare The Batter

    Preheat oven to 375°F.

    Grease or line a muffin tin.

    In a large bowl, whisk together:

  • flour
  • baking powder
  • baking soda
  • Italian seasoning
  • garlic powder
  • onion powder
  • salt

In another bowl, whisk together:

  • eggs
  • milk
  • olive oil
  • pizza sauce

Pour the wet ingredients into the dry ingredients and stir until combined.

Fold in:

  • mozzarella cheese
  • zucchini
  • tomatoes
  • mini pepperoni

Do not overmix.

Step 3: Fill The Muffin Pan

Evenly spoon the batter into the muffin cups.
