WHAT IS CHICKEN RICE NOODLES

It is a popular Asian dish that is often served across China, Korean or Thailand and has several versions to the cooking process. It is made typically with rice noodles and sliced chicken that comes then comes an authentic Asian sauce. The noodles can be thin, medium to thick.

HOW TO MAKE SPICY RICE NOODLES

To make the noodles spicy, you will be adding in some “red pepper flakes” along with “chili oil” and some fresh minced garlic. See the chili oil brand I use below

HOW TO MAKE CHICKEN RICE NOODLES

  • The trick to getting the chicken thinly sliced like this is to slice from semi frozen
  • Once sliced, add 1 tbsp of cooking oil to a pan and sauté the chicken slices till lightly browned and cooked throughout then remove and set aside
  • Meanwhile, bring a pot of water to a boil and add in the rice noodles
  • Turn down the heat to medium and simmer till al dente typically 7 minutes, strain immediately in cold water to cool down and stop the cooking process and set aside
  • Next, in the same pan add 2 tbsp sesame oil, baby tomatoes, fresh minced garlic and simmer till fragrant
  • Add in the chicken stock, soya sauce, chili flakes, chili oil and simmer on low heat for a few minutes before tossing back in the cooked chicken slices and rice noodles
  • Toss in the fresh cilantro and simmer all together on low for a minutes to serve

HOW TO COOK RICE NOODLES IN CHICKEN BROTH

You can do this instead of using water, however you will need much more broth. So i highly recommend cooking them instead in water till near al dente then straining and rinsing in cold water to stop the cooking process. Before adding them to any chicken broth.

Ingredients

  • 1 chicken breasts, sliced
  • 250 grams rice noodles
  • 1 cup chicken stock
  • 1 cup baby tomatoes
  • 1 cup cilantro
  • 1 tbsp cooking oil
  • 2 tbsp chili oil
  • 1 tsp soya sauce
  • 3 tbsp sesame oil
  • 1/2 tsp red pepper flakes
