Easy Marry Me Chicken recipe

Have you tried Merry me Chicken yet? If not, you have to try this dish.

I first heard of this recipe from a lady on Tik Tok and I have made it several ways since then. All of which have been delicious, there is a few different variations to making this. Some use basil while others use spinach. Some omit the tomato sauce and keep the sun-dried tomatoes etc. For this recipe here I am keeping it pretty traditional. It is super simple to make and serves great alongside any type of pasta or even quinoa.

MARRY ME CHICKEN VS TUSCAN CHICKEN

The only difference between these two popular dishes is that Marry Me Chicken uses “Red Pepper Flakes” and some “Tomato paste” . I typically omit both as I much prefer the sun-dried tomatoes and chicken / cream / parmesan flavors to dominate the dish.

WHAT DOES MARRY ME CHICKEN TASTE LIKE

It tastes a lot like Tuscan Chicken which is a Sicilian Italian dish. Which has seasoned chicken cooked in a creamy chicken cream broth along with spinach or basil and sun dried tomatoes or fresh baby tomatoes and of course parmesan cheese and lemons.

How to Make Merry Me Chicken

  • To make this easy Marry me Chicken recipe, you will want to slice the 2 chicken breasts into four halves
  • Season with salt and pepper before placing into a hot skillet with your melted butter SautĂ© the chicken on both sides over medium heat for 6-7 mins each or until the middle is no longer pink Remove and set aside
  • Meanwhile, create the creamy tomato garlic sauce Add more butter to the pan and sautĂ© the onions then garlic tilltranslucent
  • Once cooked add in the chicken stock, cream and parmesan cheese
  • Lastly add in the spinach and sun dried tomatoes and cover to cook over low – medium heat for 6-7 minutes. Remove the lid and squeeze some fresh lemon into the pan and serve with more parmesan cheese if desired

Ingredients

  • 2 chicken breasts, sliced into four halves
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cups chicken broth
  • 1 cup heavy/whipping cream
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup freshly grated parmesan cheese
  • 2 cups spinach, chopped
  • 1 shallots chopped finely
  • 2 cloves garlic minced
  • 1/2 tsp Dijon mustard
  • SEASONINGS
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Pinch crushed red pepper flakes optional
  • Pepper to taste
