Easy Cheesy Chicken Quesadilla

Quick, cheesy, and packed with flavor, this dish is sure to be a hit with the whole family. Enjoy cheesy goodness in no time! 

WHY YOU WILL WANT TO MAKE THIS

This Easy Cheesy Chicken Quesadilla is ready in about 30 minutes. And is a bit different than the average chicken quesadilla in that it tastes more Italian than Mexican. If you love quesadillas this recipe is a keeper.

You will want to sauté the seasoned cubed chicken breast in olive oil and butter prior to making the quesadilla. And add just a bit of chicken stock to make it extra juicy too!

WHAT INGREDIANTS FOR A CHICKEN QUESDILLAS

  • Flour Tortillas
  • Chicken breast
  • Red pepper, finely diced
  • White Cheddar and Mozzarella cheese
  • A bunch of seasonings for the chicken
  • Baby tomatoes, cilantro and limes to serve

WHAT TO EAT WITH A CHICKEN QUESDILLAS

WHAT TYPE OF TORTIALLAS FOR QUESEDELLAS

You can use a common and easy to find Flour Tortilla wrap from your local grocery store or find one with extra ingredients and even protein in it if desired.

How to Make Easy Cheesy Chicken Quesadilla

  • In a large frying pan add 1 tbsp of olive oil and chopped onions, sauté till partially browned then toss in 1/2 tsp of sugar and allow the onions to fully caramelizes
  • Remove the onions and set aside, meanwhile fry the ground beef till browned also, toss in all the seasonings to coat Stir in the beef stock and set aside
  • Next, grease another clean frying pan (large enough) to hold a tortilla and bring to a high heat before turning down to low-medium heat Add in the tortilla and allow it to cook for a few seconds, once it bubbles some.
  • Flip over and grease the other side too
  • Place the cheese on one half of the tortilla, and top with the ground beef and onion mixture, top with more cheese
  • Then fold in half and press down with a spatula against the pan to allow it to cook more and the cheese to meltOnce you see the cheese has near fully melted
  • Turn over the half tortilla and fry on the other side for a few minutes till lightly browned
  • Place on a cutting board to cool down before slicing into 3 or 4 slices
  • Lastly, make the “Homemade In-N-Out Sauce and some fresh lime slices. Enjoy!

Ingredients

  • 1 Large Flour Tortilla
  • 1 chicken breast, marinated diced and sauteed
  • 1 cup white cheddar cheese
  • 1/2 red pepper diced
  • 5 baby tomatoes, diced
  • 2 tbsp cilantro
  • 1/2 lime
  • 1 cup mozzarella shredded cheese
  • 2 tbsp chicken stock
  • 1 tsp olive oil
  • 4 tbsp vegetable oil
  • SEASONINGS
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
