Dandelions Greens Salad
This is the best and healthiest Dandelion Green Salad recipe as it contains Dandelion leaves, which are packed full of antioxidant, nutrients and plenty of vitamins. These dandelion leaves are the added to a spring mix salad mixture to balance the flavors, along with sliced radishes, tomatoes and cilantro.

Forging for Dandelions Greens are fun and is a great way to get out and spent some time in nature. And they where used often in meals during the great depression.
Using this superfood in your tea, salad or as a side is also amazing as Dandelions are defiantly a superfood that is packed full nutrients, antioxidants, and plenty of vitamins. There is no reason to not pick and use them, other than if they are covered in pesticides etc.

So it is best to go forge some in the wild, and be sure to rinse and wash them throughout to ensure there is no dirt, bugs or anything else left on them before consuming.

How to Pick Dandelion Greens for Salad
You can foraging fresh dandelions in the wild for free (be sure to wash them prior) or find them in most local healthy food grocery stores in the spring.
You will want to pick the whole plant, which kind of looks like Swiss chard from the bottom. You can eat the whole plant also, minus the bottom stem which can be discarded since it was direct in the ground. The leaves are very tender and the stems more firm and bitter in taste.
HOW TO USE DANDELIONS FOR FOOD
- The Top Flowers can be made into Dandelion Iced Tea
- The Leaves to make a fresh salad or to be sautéed as a side dish
- The stems can also be eaten, but their bitter and best cooked
How to make Dandelion Greens Salad
- Remove the flowers and stems from the leaves of the dandelion and save for other uses.
- Wash the leaves of the dandelions, chop and set aside
- In a chopping board, slice the radishes, tomatoes and chop the cilantro
- Add to a large salad bowl along with 1 pack of pre-washed spring salad mixture
- Toss in the chopped dandelion leaves and mix well
- Toss in all the DRESSING ingredients and toss well
- Serve and enjoy!

And don’t throw out the green stems either, they are just as healthy and can be added to a stir fry or put into a salad. The green stems and leaves can be chopped up and used to make salad or placed in a stir-fry and are known to have more vitamins A, C, K, Omega 6, iron, phosphorus, potassium, and calcium than spinach. DANDELION GREENS TASTE
The greens have a bit of a bitter taste that is why I like to mix it with spring mix salad which evens the taste out real well and once you add a little acidity from a lemon and season with your favorite dressing the salad becomes one amazing salad that everyone can enjoy!
The dressing you use depends on your taste, below you will find a few that work well in this salad.
- Garlic powder, lemon juice and olive oil\
- Olive oil and honey
- Apple cider vinegar, salt and pepper
- Your favorite dressing

Dandelion Greens Salad
Summer Salad for everyone!
Ingredients
- 142 grams spring mix salad
- 142 grams dandelion stems / leaves
- 1 bunch of cilantro, chopped fine
- 10 radishes, sliced
- 1 tomato, diced small
- 5 tbsp olive oil
- 1/2 lemon
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Remove the flowers and stems from the leaves of the dandelion and save for other uses.
- Wash the leaves of the dandelions, chop and set aside
- In a chopping board, slice the radishes, tomatoes and chop the cilantro
- Add to a large salad bowl along with 1 pack of pre-washed spring salad mixture Toss in the chopped dandelion leaves and mix well
- Toss in all the DRESSING ingredients and toss well
