Dandelion Greens Recipe
This Dandelion Greens Recipe are done Italian style and can be made with just the leaves of the dandelion and if desired you can add the stems as well. Which I always do as it adds extra nutrience to this side dish.

DANDELION GREENS TASTE
The greens have a bit of a bitter taste that is why I like to mix it with spring mix salad which evens the taste out real well and once you add a little acidity from a lemon and season with your favorite dressing the salad becomes one amazing salad that everyone can enjoy!
The dressing you use depends on your taste, below you will find a few that work well in this salad.
- Garlic powder, lemon juice and olive oil\
- Olive oil and honey
- Apple cider vinegar, salt and pepper
- Your favorite dressing

HOW TO USE DANDELIONS FOR FOOD

HOW TO COOK DANDELION GREENS ITALIAN STYLE
This recipe calls for Olive oil, Italian seasonings, Parmesan cheese and a hint of lemon juice.
There is a method to cooking these correctly, so be sure to read the instructions below in the recipe card.
You can foraging fresh dandelions in the wild for free (be sure to wash them prior) or find them in most local healthy food grocery stores in the spring.
How to Pick Dandelion Greens for Salad
You will want to pick the whole plant, which kind of looks like Swiss chard from the bottom. You can eat the whole plant also, minus the bottom stem which can be discarded since it was direct in the ground. The leaves are very tender and the stems more firm and bitter in taste.
HOW TO MAKE DANDELION GREENS
- Wash and chop the dandelion leaves and stems well
- Boil in salted water for 10 minutes, strain and set aside
- In a large frying pan add the olive oil and sauté the greens for another 10 minutes before adding in the remaining ingredience and serve hot. Enjoy!
PREPARING DANDELION GREENS
To reduce the bitterness, I highly recommend boiling your dandelion greens in salted water or vinegar prior. Then straining them before sautéing them.

Ingredients
- 142 grams dandelion stems / leaves
- 3 tbsp olive oil
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1/2 cup parmesan cheese
- 1/2 lemon
- Pepper to taste
