These Crispy Garlic Herb Roasted Mini (little) Potatoes are super delicious, fork tender and ready in less than 40 minutes and are packed full of garlic herb butter flavors that serve well alongside almost any other main course meal or as a healthy snack on there own.

In order to make these fork tender and moist you will want to boil them prior to roasting.

My favorite brand of mini potatoes is from the little potatoes company as seen below. There is no peeling of these potatoes and they come out delicious every time!

This simple recipe uses only a few ingredients, but the result is packed with flavor:

  • 1 ½ lbs (680g) mini new potatoes
  • ÂĽ cup olive oil
  • 2 tbsp butter
  • 1 tbsp garlic powder
  • 2 tbsp Italian seasoning
  • Fresh chopped, parsley

Crispy Garlic Herb Roasted Mini Potatoes

Cook Time: 45 minutes
Total Time: 45 minutes

Ingredients

  • 1 ½ lbs (680g) mini new potatoes
  • ÂĽ cup olive oil
  • 2 tbsp butter
  • 1 tbsp garlic powder
  • 2 tbsp Italian seasoning
  • Fresh chopped, parsley

Instructions

  1. Boil the Potatoes: Anywhere from 8-10 minutes, or until the potatoes are fork tender. Drain the potatoes and set aside
  2. Preheat the Oven: 425°F (220°C).
  3. Prep Potatoes: Drizzle melted butter, olive oil and seasonings over the potatoes and place face down on a greased baking sheet.
  4. Roast: Drizzle the remaining oil/butter mixture over the potatoes. Roast for 25 minutes until the edges are golden brown and crispy.
  5. Enjoy!
