Ingredients

  • For the Pasta
  • 1 pound (454 g) elbow macaroni or cavatappi pasta
  • 454 g cooked Atlantic lobster meat, chopped into bite-sized pieces
  • For the Cheese Sauce
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup Gruyère cheese, freshly shredded
  • 1 cup mozzarella cheese, freshly shredded
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • For the Crispy Topping
  • 1 cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ cup Parmesan cheese
  • 1 teaspoon dried parsley
  • Garnish
  • Extra lobster pieces
  • Fresh parsley
  • Lemon wedges

Instructions

    Step 1: Cook the Pasta

    Bring a large pot of salted water to a boil.

    Cook the macaroni according to package directions until al dente.

    Drain and set aside.

    Do not overcook the pasta, as it will continue cooking in the oven.

    Step 2: Prepare the Cheese Sauce

    In a large saucepan or Dutch oven, melt the butter over medium heat.

    Whisk in the flour and cook for 1 minute, stirring constantly.

    Slowly pour in the milk and cream while whisking continuously until smooth.

    Continue cooking for 3 to 5 minutes until the sauce begins to thicken.

    Step 3: Add the Cheese

    Reduce the heat to low.

    Add the cheddar, Gruyère, and mozzarella cheeses.

    Stir until completely melted and smooth.

    Mix in the Dijon mustard, lemon juice, lemon zest, garlic powder, onion powder, paprika, salt, and pepper.

    Taste and adjust seasoning as needed.

    Step 4: Add the Lobster

    Fold the chopped lobster meat into the cheese sauce.

    Reserve a few larger lobster pieces for garnish if desired.

    Step 5: Combine with Pasta

    Add the cooked pasta to the cheese sauce.

    Stir gently until every piece of pasta is coated in the creamy lobster cheese sauce.

    Step 6: Assemble

    Preheat oven to 375°F (190°C).

    Transfer the lobster mac and cheese to a greased 9x13-inch baking dish or white Dutch oven.

    In a small bowl, combine the panko breadcrumbs, Parmesan cheese, melted butter, and dried parsley.

    Sprinkle evenly over the top.

    Step 7: Bake

    Bake uncovered for 20 to 25 minutes until bubbling and golden brown on top.

    For extra colour, broil for 1 to 2 minutes at the end.

    Watch carefully to prevent burning.

    Allow the mac and cheese to rest for 5 minutes before serving.
