Creamy Garlic Scallops and Bacon Recipe

Ingredients

  • 1 lb large sea scallops
  • 6 strips bacon, chopped
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup freshly grated parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 cup fresh spinach (optional)
  • Fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

    Step 1: Prepare the Scallops

    Pat the scallops completely dry using paper towels.

    Season with paprika, salt, and pepper.

    Dry scallops are key to getting that beautiful golden crust.

    Step 2: Cook the Bacon

    In a large skillet over medium heat, cook the chopped bacon until crispy.

    Remove bacon with a slotted spoon and place onto a paper towel-lined plate.

    Leave about 2 tablespoons of bacon grease in the pan for flavor.

    Step 3: Sear the Scallops

    Increase heat to medium-high.

    Add the scallops to the skillet and sear for about 2–3 minutes per side until golden brown and caramelized.

    Do not overcrowd the pan.
