Creamy Boursin Cannellini Beans

These Creamy Boursin Cannellini Beans make for a healthy inexpensive vegetarian breakfast, lunch or dinner recipe. What i love most about these Cannellini beans is that they are packed full of protein and nutritious and are super healthy.

And the longer you simmer the beans, the softer and creamier they become!

WHAT IS BOURSIN CHEESE

Boursin cheese is a brand of soft spreadable French cheeses. They come in 3 popular varieties and are all flavored with different ingredients. They are expanding their flavors by the day.

It is the perfect ingredient to flavor CANNELLINI beans and it melts well and is similar to cream cheese.

Boursin Cheese Types

There are currently 8 flavors, Shallot & Chive, Black Pepper, Rosemary & Black Garlic, Basil and Chive, Garlic and fine herb, Fig & Balsamic.

For this recipe I used shallot and chive.

HOW TO MAKE CANNELLINI BEANS CREAMY

You add in some liquid such as chicken or vegetable stock and heavy cream and allow them to simmer on medium-low heat

HOW TO MAKE BOURSIN CANNELLINI BEANS

  • In a large sauce pan add your butter and olive oil and bring to a medium heat
  • Add in the finely diced, celery and onion sauté till translucent
  • Toss in the minced garlic and sauté till fragrant
  • Add in the strained beans
  • Vegetable stock and heavy cream along with seasonings
  • Add in the boursin cheese and allow it to melt stiring often
  • Simmer uncovered for 15 minutes Serve with crusty bread or cheesy bread

CANNELLINI BEANS SUBSTIUTE

You can substitute them for a smaller bean such as:

Navy beans, Northern Beans and butter beans.

What to serve with Creamy Cannellini Beans

  • Crusty bread or a hard bread of your liking
  • White Fish such as cod, halibut or tilapia
  • Canned Sardines
  • Lamb or Beef

Ingredients

  • 1 can of drained, Cannellini beans
  • 1/2 package of Boursin Shallot & Chive cheese
  • 1 cup vegetable stock
  • 2 tbsp heavy cream
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 medium onion, diced fine
  • 2 celery sticks, diced very fine
  • 1 tsp lemon juice
  • 1/2 tsp basil
