Creamy Beef Stroganoff with Tortellini

Is one of my new favorite dishes. I have always loved Beef Stroganoff and will order it whenever it is on the menu at any restaurants. However, I love even more this homemade Creamy Beef Tortellini Stroganoff as the tender beef tortellini it in makes it even more special.

This recipe can easily feed a family of four to five. If you want to have it two days in a row that is great too. Simply store in an air tight container in the fridge and enjoy the following day!

WHAT TYPE OF TORTELLINI FOR BEEF STORGANOFF

You can use any kind really, but the one I like to use is seen below! It is pre-made and can be found in almost any grocery store.

WHAT IS BEEF STORGANOFF

It is a classic German dish that has sliced marinated beef, onions and mushrooms in it all mixed into a creamy white sauce that serves well over egg noodles or your favorite pasta.

When making this dish, be sure to not omit any ingredient as they all help make this dish delicious and unforgettably tasty!

WHAT SAUCE FOR BEEF TORTELLINI

You can use just about any type of white sauce or tomato sauce. However, I highly encourage you to make it in beef stroganoff sauce for something extra special.

CAN BEEF STOGANOFF BE MADE WITH GROUND BEEF

Yes, you can use ground beef instead of sliced beef. However, I highly recommending using lean and you do not want it to oily.

CAN BEEF STORGANOOF BE MADE WITHOUT MUSHROOMS

Yes, not everyone likes mushrooms and that is okay! However, you may want to add another vegetable such as spinach.

Beef Tortellini Stroganoff

Beef Tortellini Stroganoff

Cook Time: 30 minutes
Total Time: 30 minutes

Ingredients

  • 500 grams beef tortellini
  • 2 tbsp cooking oil
  • 1 tbsp butter
  • 1 medium onion
  • 3 minced garlic
  • 1 pound sliced beef
  • 1 cup beef or mushroom stock
  • 2 cups sliced mushrooms
  • 1 cup sour cream
  • 1/2 cup whipping cream
  • 2 tbsp Worcestershire sauce
  • 2 tbsp Dijon mustard
  • 4 tbsp fresh parsley
  • Salt and pepper to taste

Instructions

  1. Start by slicing the beef and season with salt and pepper
  2. Next, bring a large pot of water to a boil and cook the tortellini till al dente
  3. Remove, strain and set aside
  4. In a large cooking pot add the cooking oil and once heated sauté the beef till browned
  5. Remove and set aside, covering to keep warm
  6. Meanwhile. chop the onion, slice the mushrooms and mince the garlic
  7. Add 1 tbsp butter to the pot and sauté the onion and mushrooms together till lightly browned approx. 10 minutes
  8. Add int he minced garlic and sauté till fragrant approx. 2 mins.
  9. Add in stock, cream along with Worcestershire sauce and Dijon mustard
  10. Whisk till blended
  11. Simmer over low heat
  12. Meanwhile, add the sour cream to a cup and temper in 1/2 cup of the hot liquid whisking well to ensure there is no clumbs
  13. Slowly, whisk into the hot liquid
  14. Add back in the pasta and beef and allow it to all heat throughout
  15. Serve with fresh parsley
