This Christmas Breakfast Casserole Bake recipe has all the elements you would want it a Christmas Morning Breakfast with the addition of one special ingredient that many others don’t have which really takes it up a notch! This recipe was suppose to go on this blog early December, but it’s now early January! Better late than never. And of course you can make this just about anytime of the year.
But it is the dish I served this holiday and it was super good and had to make it to this site for all my lovely readers.
When it comes to a Christmas morning breakfast casserole. You are going to want a whole lot of crunch but also some creamy which the spinach / cheese mixture offers along with the eggs! I think this just may be the best Christmas Morning Casserole yet. But I will let you decide 🙂

HASHBROWNS ARE ON THE BOTTOM LATER, WHICH IS TOPPED WITH A SPINACH CREAM CHEESE MIXTURE. YUM!

I layer mine like so… keep in mind I wanted it to have GREEN, RED AND WHITE elements! Green spinach, White Eggs and Red Bacon 🙂
This Christmas Morning Breakfast Casserole is layered like so
- Hashbrowns
- Spinach and cream cheese
- Chopped red, yellow and orange peppers
- Scrambled eggs
- Bacon
- Cheese

It is a one dish recipe, that really comes together like a meal. And is a special treat that is often made Christmas morning in many peoples homes.

Christmas Breakfast Casserole Bake

Ingredients
- 4 frozen hashbrowns
- 5 eggs, 4 scrambled 1 saved for the top
- 1/2 red pepper, diced
- 1/2 orange pepper, diced
- 1/2 yellow pepper, diced
- 2 cups spinach
- 1/2 cup cream cheese soft
- 1 cup shredded cheddar cheese
Instructions
- Start by chopping your vegetables fine then set aside
- Meanwhile, scramble the eggs with 2 tbsp of milk and season them with salt and pepper
- Then, cook the spinach and strain add the cream cheese and mix well to combine
- In the same pan, cook the bacon. Once cooked, chop the bacon and set aside Next, add 1 tbsp of oil evenly to the bottom of a baking pan before placing the hashbrowns down
- Cover the top of the hashbrowns with your spinach / cream cheese mixture Top with the finely chopped peppers then bacon and shredded cheddar cheese
- Top with one fresh egg
- Bake at 375 f for 30 minutes
