Cheesy Vegetarian Quesadilla

WHY YOU WILL WANT TO MAKE THIS

This Cheesy Vegetarian Quesadilla is ready in about 30 minutes. And can be served for breakfast, lunch or dinner. It is also inexpensive and a healthy dish that even the kids will like.

You can add fresh garlic alongside the garlic powder I used in the recipe, if you love extra garlic flavor. It will not be over-powering either.

Cheesy Vegetarian Quesadilla

WHAT IS A CHEESY VEGETARIAN QUESADILLA

It is made up of all the same elements of any other quesadilla with the addition of Italian cheese vs Mexican cheese and spinach seasoned with Italian seasonings.

WHAT TYPE OF TORTIALLAS FOR QUESEDELLAS

You can use a common and easy to find Flour Tortilla wrap from your local grocery store or find one with extra ingredients and even protein in it if desired.

HOW TO MAKE A CHEESY VEGETARIAN QUESADILLA

  • In a large frying pan add 1 tbsp of olive oil and defrosted spinach or fresh if desired. Sauté till cooked and strain all the water out if cooked from frozen
  • Add in all the seasonings and sauté one more minute before setting the spinach aside
  • Next, grease another clean frying pan (large enough) to hold a tortilla and bring to a high heat before turning down to low-medium heat Add in the tortilla and allow it to cook for a few seconds, once it bubbles some
  • Flip over and grease the other side too
  • Place the cheese on one half of the tortilla, and top with the cooked spinach, top with more cheese
  • Then fold in half and press down with a spatula against the pan to allow it to cook more and the cheese to melt
  • Once you see the cheese has near fully melted
  • Turn over the half tortilla and fry on the other side for a few minutes till lightly browned Place on a cutting board to cool down before slicing into 3 or 4 slices
  • Top with sliced baby tomatoes and cilantro and enjoy!

Ingredients

  • 1 package of frozen spinach, cooked and strained
  • 4 tbsp cooking oil or olive oil
  • 2 large flour tortillas
  • 1 cup white cheddar, shredded cheese
  • 1 cup mozzarella shredded cheese5 tbsp vegetable oil
  • 1 tbsp fresh cilantro
  • 1/2 cup baby tomatoes, sliced
  • SEASONINGS
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp Italian seasonings
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Notes

You can use frozen spinach or fresh, just be sure to fully strain before placing it into the Tortilla wrap.
