Cheesy Prawn Mushroom Risotto recipe
This Creamy Cheesy Prawn Mushroom Risotto recipe is made with parmesan cheese and is ready in less than 30 minutes!
I included instructions on how to make this dish for 2 people. If it is just you, feel free to half the recipe. If you want to serve this for 4 people double it! Simple as that.

WHAT IS SHRIMP / PRAWN RISOTTO
Risotto is an Italian dish that is made with short grain rice and can be cooked with fresh shrimp added to the dish. You want to pre cook the shrimp, ideally fry it and serve onto!
I like to use this type of risotto it has mushrooms in it and is so good! They have a a few flavors so you can experiment with your favorite!
HOW TO MAKE PRAWN RISOTTO
Start by frying or grilling the shrimp. I pan fried mine in butter, olive oil and fresh garlic.
- Start by cooking the risotto according to package instructions
- Once cooked, cover and set aside
- In a large frying pan heat up your oil then add in the butter to melt
- Toss in shrimp and fresh garlic cook for 2 minutes over medium heat or until browned to your liking
- Remove the shrimp and set aside
- Meanwhile in the same pan, add the remaining butter and fresh herbs
- Squeeze in the lemon juice and sauté for a few seconds then set aside
- Plate the risotto and top with the garlic butter shrimp
- Enjoy!

Feel free to add some fresh sautéed chopped mushrooms to this as well
Ingredients
- 8 medium to large shrimp
- 1 package of musrhoom risotto with seasonings
- 1/2 cup of seafood stock
- 1 tbsp olive oil
- 1/2 cup butter
- 1 tsp dried parsley
- 2 tbsp parmesan cheese
- 1 /2 lemon
Instructions
- Start by cooking the risotto according to package instructions and add 1 tbsp of parmesan cheese to the cooking process
- Once cooked, cover and set aside
- In a large frying pan heat up your oil then add in the butter to melt
- Toss in shrimp and fresh garlic cook for 2 minutes over medium heat or until browned to your liking
- Remove the shrimp and set aside
- Meanwhile in the same pan, add the remaining butter and fresh herbs
- Squeeze in the lemon juice and sauté for a few seconds then set aside
- Plate the risotto and top with the garlic butter shrimp and parmesan cheese
- Enjoy!
