Creamy Cajun Scallop Pasta | Brave Enough

How To Make Brave Enough Creamy Cajun Scallop Pasta

Step 1

Bring a large pot of salted water to a boil.

Cook the fettuccine according to the package directions until al dente.

Reserve ½ cup of pasta water before draining.

Step 2

Pat the scallops completely dry using paper towels.

Season both sides with Cajun seasoning, salt, and pepper.

Step 3

Heat the olive oil and butter in a large skillet over medium-high heat.

Sear the scallops for 2-3 minutes per side until beautifully golden with a caramelized crust.

Remove and set aside.

Step 4

Reduce the heat to medium.

Add the butter and garlic to the same skillet.

Cook for about 30 seconds until fragrant.

Step 5

Pour in the heavy cream.

Stir in the Parmesan cheese, Cajun seasoning, smoked paprika, onion powder, and black pepper.

Whisk until the sauce becomes smooth and creamy.

Step 6

Add the cooked fettuccine to the skillet.

Toss until every strand of pasta is coated in the creamy Cajun sauce.

If the sauce becomes too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

Step 7

Return the scallops to the pan or place them over each serving.

Garnish with fresh parsley, extra Parmesan cheese, cracked black pepper, and sliced green onions if desired.

Serve immediately.
