I first tried Marry Me Chicken soup a few months back and have been experimenting with the same concept but in different methods. You can put basically any type of pasta in this soup, smaller pasta such as orzo or shells will work very well.

To larger pasta pieces such as rotini. I have found adding spinach and cheese stuffed ravioli to be the best. If you want a more tomato taste to the broth simply add 1 tbsp of tomato paste during the sauce cooking process.

This is one of my current favorite ways to have this Marry Me Chicken soup, I hope you give it a try!

WILL YOU MARRY ME CHICKEN?

This recipe claims that if you make it and serve it to a loved one they will want to marry you. I can attest it is that good, so I would not be surprised if you get a proposal after serving this soup.

WHAT DOES MARRY ME CHICKEN SOUP TASTE LIKE

It tastes a lot like Tuscan Chicken which is a Sicilian Italian dish. Which has seasoned chicken cooked in a creamy chicken cream broth along with spinach or basil and sun dried tomatoes or fresh baby tomatoes and of course parmesan cheese and lemons.

There is different variations to this recipe as well. For instance some people add tomato paste and basil, where my recipe omits the paste and uses just sun dried tomatoes and spinach only. This is how I like to prepare this dish but if you want a more authentic marry me chicken simply add some tomato paste and basil as well.

WHAT IS MARRY ME CHICKEN ACTUALLY CALLED

Know one truly knows, as it first came known by a Tik tok creator named Lindsay Funston’s. Where by fluke she created it on the whim and said it was so good, she will name it “MARRY ME CHICKEN”. It really reminds me a lot of Tuscan Chicken though 😉

But one thing I can guarantee it is of Italian origins and super delicious way to have chicken.

MARRY ME CHICKEN SOUP INGREDIENTS

Marry Me Chicken recipes start with seasoned chicken which is cooked in creamy garlic, herbed, sun-dried tomato sauce. Some people like to add tomato paste as well. Personally, I prefer a more creamy cheese taste to tomato and find the sun-dried tomatoes do the trick for me.

  • Chicken breasts
  • Butter
  • Shallots
  • Garlic
  • Sun-dried tomatoes (either dried or canned will work)
  • Spinach
  • Chicken stock
  • Cream
  • Parmesan cheese (fresh is best here)
  • Dijon Mustard
  • Lemon Juice
  • Red pepper flakes
  • Assortment of seasonings (see recipe)

And NO THIS RECIPE does not have flour! Like most Merry Me Chicken dishes. There is enough flour in the paste 😉

Also, you can make this in the slow cooker if you want. Just simply add the ravioli during the past few minutes of the cooking process. You do not want over cooked pasta!

THE BEST RAVIOLI FOR THIS SOUP IS OLIVIERI – i use 225 grams which serves 3 people. Want to serve this soup to more people? Simply double the recipe up 🙂

HOW TO THICKEN MARRY ME CHICKEN SAUCE

  • You can remove some of the sauce and mix in some flour
  • Once it has blended pour into the broth prior to adding the ravioli and turn up the heat for a few minutes to thicken

It is best to use Fresh Parmesan cheese for this soup! But if you do not have on hand the powdered will do.

CAN MARRY ME CHICKEN BE FROZEN

Yes, the sauce / soup base can be frozen. Even with the addition of the chicken, as long as the chicken was not pre-frozen. However, when it comes to the pasta part. You will want to add that the day of enjoying. So if you want you can create the sauce / soup and freeze that in a air tight container up to 3 months.

Best Marry Me Chicken Soup recipe

Ingredients

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 225 grams of spinach cheese ravioli pasta
  • 2 chicken breasts, sautéed and chopped
  • 4 1/2 cups chicken broth
  • 1 1/2 cup heavy/whipping cream
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup freshly grated parmesan cheese
  • 3 cups spinach
  • 2 shallots chopped finely
  • 4 cloves garlic minced
  • 1 tsp Dijon mustard
  • SEASONINGS
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 teaspoon crushed red pepper flakes optional
  • Pepper to taste

Instructions

  1. Start by adding 1 tbsp butter to a large frying pan then toss in the chopped shallots, garlic and sauté till translucent. Remove the onions and garlic, then add the remaining butter and olive oil to the pan
  2. Season well the 2 chicken breasts with the Italian and garlic seasonings on both sides.
  3. Then chop the chicken into bite sized pieces. Then sauté the chicken till browned!
  4. Remove and set aside with the garlic and onions.
  5. In the same pan/ pot add in the chicken broth, cream and crushed red peppers and Dijon/ mustard to combine
  6. Toss in the chopped sun dried tomato
  7. Simmer covered on low heat for 5 minutes before adding in the Ravioli pasta
  8. Reduce heat to medium-low; cook, stirring occasionally, until pasta is al cooked, about 3 minutes.
  9. Toss in the spinach and cooked chicken, garlic and onions
  10. Once the spinach has wilted add in the parmesan cheese and remove from the heat
  11. Once ready to serve, squeeze the lemon over the soup and stir to enjoy!
