Yes, you can use less soya sauce for lower sodium or a low sodium sauce. As well you can add more frozen vegetables if desired also.

Yes, be sure to use fresh chicken breasts as you do not want to re-freeze any meal ideally.
We hardly ever order this dish from the restaurant anymore, because mine is better. That is unless we know the restaurant well and know they make it just as good.

Best Chicken Fried Rice Recipe
Start with a day old rice to make this dish Authentic!
Ingredients
- 3 cups One Day Old "Cooked Rice"
- 1 chicken breasts
- 2 tbsp Vegetable oil, for frying
- 1 tbsp Sesame oil
- 2 large Eggs
- 2 cups Frozen mixed vegetables peas, and carrots
- 1 tbsp Oyster sauce
- 2 tbsp Medium Soya sauce
- 1 tsp Garlic Powder
- 1 tsp Onion powder
Instructions
- In a small bowl whisk together the soy and oyster sauce and set aside.
- In a large, nonstick skillet add 1 tbsp of cooking oil and your chicken breast. Sauté over medium heat on both sides for roughly 10 mins each till cooked through.
- Remove the chicken breast then set aside to cool.
- Next in the same pan add the rest of the cooking oil and the day old rice, sauté for a few minutes till the rice is fully heated and a bit crispy. Then remove the rice and set aside.
- Then in the same pan add 1 tbsp of sesame oil and 2 beaten eggs. Scramble them and chop them up finely with a spatula while cooking. Remove the eggs and set aside.
- Dice the chicken once cooled and add it back to the pan with the mixed vegetables along with all the seasonings, add back in the rice and eggs.
- Fry everything together for about 5 minutes. Serve and enjoy!
Notes
add some red chili flakes to the recipe for some spice
