Like I said, you can add your own favorite salad dressing to make this Vegetarian Cannellini Bean Quinoa Salad or you can use the one I did. I really like this VEGAN salad dressing from Naked & Saucy a Vancouver company!
It gives the salad an UMAMI taste and is mostly made with olive oil, keto soya sauce, apple cider vinegar and lemon juice along with some seasonings. I also, like to add more FRESHLY squeezed lemon juice for added freshness.

CANELLINI BEAN SALAD WITH FETA
You can omit the salad dressing above and add crumbled feta instead along with garlic powder, lemon juice and olive oil if desired that also is very good option for this salad.
How to make Vegetarian Cannellini Bean Quinoa Salad
- Start by rinsing and straining the beans then place in a large bowl
- Meanwhile, cook the Quinoa then set aside and allow to cool before adding to the beans Add in the chopped vegetables.
- Pour in the dressing and squeezed fresh lemon.
- Set in the fridge to chill before serving.
- Enjoy!

Ingredients
- 1 can of cannellini beans
- 2 cups quinoa
- 1 bunch cilantro, chopped
- 1 red pepper, chopped
- 1 orange pepper, chopped
- 2 green onions, diced
- 1 sweet onion
- 3 tbsp Naked Salad dressing
- 1/2 lemon squeezed
