Vegetarian Stuffed Portobello Mushrooms

  • Start by placing four large portabella mushrooms into a baking dish. Remove the inner stem first, this allows you to stuff them.
  • Then strain out your pre frozen spinach in a strainer and mix in one cup of melted cheese to that in a separate bowl.

  • Add in the pepper, salt and garlic powder.

Ingredients

  • 4 Brown Portabella Mushrooms, stems and gills removed
  • 3 tbsp olive oil
  • 2 cups of defrosted frozen spinach squeezed and strained dry.
  • 1 cup of plain cream cheese, melted
  • 1/2 cup crushed bread crumbs
  • 1/2 tsp Garlic Powder
  • 1 /2 tsp Italian Seasoning
  • Salt & Pepper to taste

Instructions

  1. Start by washing and removing the stem from the inside of the mushroom. Then pat the mushroom dry with a cloth towel.
  2. Place all four portabella mushrooms into a baking dish. Remove the inner stem first, this allows you to stuff them.
  3. Then strain out your pre frozen spinach in a strainer and mix in one cup of melted cheese to that in a separate bowl.
  4. Add in the pepper, salt and garlic powder.
